Yay….it’s Friday!! And the last day of school for my kiddos!! I’m looking forward to summer break more than you know. May has been a super busy, but very productive month. Looking through all of my May posts, I have to say I am pretty proud of all of the recipes that came out of my kitchen. 😉 Lets wrap up the month and recap some of my favorite May posts that you may have missed.

Waffles and Pancakes are seriously, both, my favorite breakfast foods! The Blueberry Coconut Waffles are scrumptious! I have made them time and time again and they rank right up there as #1 breakfast of all time. In fact, it’s making me hungry just talking about them.

We don’t want to leave out the pancakes either. The big as your head Kabocha Pancake is super easy and tasty. If you’re not familiar with kabocha, you can always sub in sweet potato, butternut squash or pumpkin puree.

I’m really hoping that we have another jalapeno ready to be picked in the garden because I’m really wanting to whip some more Cilantro Jalapeno Hummus up today. Don’t worry I’m not a big fan of spicy foods…the jalapeno gives it just enough kick, but it’s not super spicy.

I think the egg talk, we had a few days ago, is worth mentioning. My post on which part of the egg was most nutritious really got people talking and like me, many of you didn’t realize just how much additional nutrients are in the yolk. Check out the chart in the post for a good comparison of the egg white to the egg yolk.

My new favorite salad is a massaged kale salad. Ever since making the Kale Salad with Strawberry Avocado Dressing, I’ve been experimenting with massaged kale and I’ve had good luck using avocado or olive oil and lemon juice to make an easy and SUPER healthy salad.

I always come home with new finds when I shop at Trader Joe’s. Posting about my favorite Trader Joe’s products is always a blast and I love hearing your favorites too. In fact, that’s how the Cilantro Jalapeno Hummus came about!

I finally got to run in a Color Me Rad race and I loved sharing the experience with you guys!

The month of May definitely wasn’t all fun and games. It has actually been quite stressful and sad. All of the weather related destruction had me looking for a little stress relief. I loved hearing all of your tips for staying stress free, too!
