Hi, guys! I’m still having a super fun time in Florida. We’ve been to all, but one of the Disney parks and both Universal parks. We have one more day here and we’ll be hitting up Epcot tomorrow.
I hope all of my American friends had a WONDERFUL Thanksgiving; full of family, friends and good food. I have a few great ways to use up your leftovers, plus an awesome Black Friday Deal.
First up is the best price on a Blendtec, ever. After, also using a Vitamix and Ninja, I can honestly say, Blendtec is my favorite. You can read about my experience with the Blendtec in my Vegan Mini Cranberry Pumpkin Cheesecake post. From now till Monday (12/1), get $50 off any refurbished Blendtec blender plus free shipping. Now, if you’ve got a little bit of pumpkin here and a little bit of turkey there; I’m sharing a few of my favorite recipes for using up the last bit of your pumpkin and/or turkey.
Perfect for breakfast, this morning, are Flourless Pumpkin Pancakes.
If you’re in the mood to do a little baking, Vegan Pumpkin Blender Bread is always a winner in my book.
Actually, if we’re baking, I think I’ll go for cookies, Vegan Soft Pumpkin Cookies with icing!
Or Chocolate Chip Pumpkin Oatmeal Cookies. Either way… YUM!
One of my favorite ways to use up leftover turkey is to throw it in soups. Replace the chicken with leftover turkey in this White Chicken Chili.
Leftover turkey is a great sandwich filling, but even better is jazzing it up with a few extras. Replace the chicken with turkey in this Greek Yogurt Chicken Salad.
Well, I better get to bed I have a big day ahead and Dad says it’s bedtime. 🙂 For other pumpkin recipes, use my search bar to search pumpkin. I have quite a few pumpkin recipes on the blog.
Have fun Black Friday shopping, if that’s your thing and enjoy those leftovers!!
