Thai Coconut Curry Chicken with Wild Rice

The Imagine® Organic Culinary Simmer Sauces are really customizable. You can start with any protein, you prefer. I used chunks of chicken breast because that’s what I had on hand, but I bet shrimp, tofu or even chickpeas would be fabulous with this sauce. While I seared the chicken and simmered it in the sauce, in a separate pot I cooked up some wild rice to complete the meal. This quick and easy meal had a wonderful exotic flavor with lots of texture. The light sweetness of the coconut blended perfectly with the hint of curry spice.
- 1 10 oz. pkg. Imagine® Thai Coconut Curry Simmer Sauce pouch
- 1 lb. raw chicken breast cut into small chunks (about 1/4 to 1/2 inches)
- 1/2-1 cup frozen green peas
- 3 cups cooked wild rice
- In a large skillet, add chicken chunks and sear for about 1 1/2 minutes on each side. Add Imagine® Thai Coconut Curry Simmer Sauce and peas to the skillet. Simmer on low until chicken is cooked through and sauce is warm, just bubbling.
- Serve Thai Coconut Curry Chicken over wild rice and enjoy!
