Hope everyone’s weekend is going great! To all of my northeastern readers and bloggie friends; I ‘ve been thinking about you guys and I hope you’re warm and safe. Here’s a little rundown of what’s going on around these parts, list style…… Enjoy!

1. I did Julie’s Heart Pounding Cardio Workout yesterday and it was a buttkicker….in a good way!
I adapted it slightly and this was my version:

  • 10 min-incline walk
  • 5 min-circuit (1 minute of each; speed skaters, high knees, burpees, jumping jacks, front kicks)
  • 10 min-run
  • 5 min-circuit (1 minute of each; speed skaters, high knees, burpees, jumping jacks, front kicks)
  • 10 min-run
  • 5 min-circuit (1 minute of each; speed skaters, high knees, burpees, jumping jacks, front kicks)
  • 10 min-incline walk

I did this workout while finishing up Bachelor and watching all of Grey’s Anatomy. Just one question….How is Tiara still there?

 

2. Breakfast for lunch can be so good, especially when it’s a Sweet Pumpkin Breakfast Lunch Scramble! After my workout, I needed something quick and easy without using too many ingredients (because I really needed to go to the store) for lunch. I went with this combo and it was fabulous; also super filling!

1/2 cup pumpkin puree
3 egg whites & 1 egg
1 tsp honey
1 tsp cinnamon

I mixed all of the ingredients, above, together and fried it(scramble egg style). I topped the scramble with coconut butter, strawberries and an extra drizzle of honey.

 

3. Lots of grocery shopping HAD to be done. I hit up all of my favorites; Costco, Trader Joe’s and Sprouts (just for the kabocha squash- I bought 5 of them!).

4. Planning to cook up some new recipes today…..FINALLY! I’m going to start off with homemade poptarts….wish me luck!

 

5. Since Landen has gymnastics on Thursday evening (Valentine’s); I think we’ll do a little celebrating today and tomorrow. Today, I’m planning heart-shaped pizzas with a homemade dough. I’ll let you know tomorrow, if it’s something you should consider for your celebration.

 

6. After all of our grocery shopping, Madelyn and I worked up an appetite and we decided to have dinner out. Madelyn’s choice was Panera Bread! I got the new Mediterranean Salmon Salad with French Onion soup on the side. This was my first time getting either of these, and while I loved the French Onion soup and will definitely get it again, I wouldn’t recommend getting salmon from Panera Bread. What was I thinking? I ate it up, but it was nothing I would recommend.

 

7. No Saturday is complete without a little froyo!
