Cookies for breakfast…..YES. PLEASE!

I absolutely love the way these cookies turned out! They’re very soft and almost muffin-like in texture. The taste is lightly sweetened by Stevia and has just a hint of peanut butter flavor. I added dried cherries to mine. I highly recommend this addition, as it added so much extra flavor to the cookie.




You can have all 5 of these cookies for only about 300 calories.

Ricotta Breakfast Cookies (makes 5 cookies)

1/4 cup rolled oats
1/4 tsp baking powder
1/2 tsp ground flax
2 packets Stevia or other preferred sweetener or sugar
1 tbsp peanut butter or other preferred nutbutter
1/4 cup reduced fat ricotta
1 egg white
optional add-ins: chopped nuts, dried fruit, shredded coconut, chia seeds
I used 1 tbsp peanuts (chopped) and 1 tbsp dried cherries (chopped)

Preheat oven to 350 degrees F.
Combine and whisk together the first 4 ingredients (dry ingredients).
Combine the next 3 ingredients (wet ingredients).
Fold wet ingredients into dry ingredients. Stir in optional add-ins.
Drop 5 spoonfuls onto a baking sheet covered in parchment paper or sprayed with natural cooking spray.
Bake at 350 degrees F. for about 10 mins.



Not only do these make a great breakfast cookie, but they actually make a great anytime cookie. Since the batch only makes 5 and the entire batch is only about 300 calories….no worries about eating the entire batch. Go ahead eat all 5!!
