Cookies for breakfast…..YES. PLEASE!

I absolutely love the way these cookies turned out! They’re very soft and almost muffin-like in texture. The taste is lightly sweetened by Stevia and has just a hint of peanut butter flavor. I added dried cherries to mine. I highly recommend this addition, as it added so much extra flavor to the cookie.

Something to think about….

Ever made breakfast cookies? Tell me about the recipe.

Have you ever baked with ricotta? This was my first time and I was really pleased with the results. I’m now thinking about coming up with a ricotta pancake recipe.

What would be your add-in of choice for these cookies? I’m thinking chocolate chips would be fabulous!

Have  a spectacular Thursday!!
