Madelyn and I created these yummy Red, White and Blueberry Parfaits in preparation for a little 4th of July slumber party. When time and patience allows for it, I love getting my kiddos in the kitchen to help prepare recipes. We always end up having a blast, plus I can see how important it is for nurturing their imaginations and creativity. Not only that, but it’s a great time to teach about nutrition.

For my graham cookie crumb layer, in these parfaits, I used Horizon Honey Snack Grahams. Horizon makes a large variety of snack products that my kiddos adore. My kids are all about the taste, but I’m pretty fond of the snack facts!

The Horizon Honey Snack Grahams contain 8g whole grains per serving, they’re made with organic wheat, are a good source of calcium, baked with a touch of real pear and sweet potato, and contain no high fructose corn syrup, artificial colors, flavors or preservatives. I have to admit, they really made these parfaits extra wonderful, with the sweetness of real honey and a lovely crunch!

Just a few simple materials needed to get those creative juices flowing! Madelyn and I had already decided that our 4th of July treat needed to include red, white and blue… of course. Also, we’ve been enjoying Horizon snacks all summer, so the Honey Snack Grahams were a given, to bring these parfaits the perfect balance of creamy and crunchy.

We chose small clear plastic cups, to keep things easy and disposable, since we were making the red, white and blueberry parfaits for a party. However, these parfaits would make a great breakfast or snack any day of the week. You could even make them ahead of time in a mason jar and then just store in the fridge overnight.

Use any favorite yogurt- regular or Greek. I chose Yulu Aussie Style Yogurt. I’ve seen this new yogurt all around the interwebs, but haven’t had a chance to try it out. The whole family really loved it. If you like Greek yogurt, you definitely need to give Yulu a try. It’s super smooth and creamy with no artificial flavors or colors.

Keep things simple, keep things light and for goodness sake, keep that oven off! Whip up a crowd pleasing treat, that will work as a breakfast, snack or dessert and let the kiddos help!

Red, White and Blueberry Parfaits - Simply layer your favorite yogurt, juicy strawberries, fresh blueberries and honey graham crumbs (granola or cereal) for an easy nutritious morning meal.

Ingredients
  • 3/4 cup graham cookies from box of Horizon Honey Snack Grahams crushed
  • 4 5.3 ounce containers yogurt (I used Yulu vanilla bean yogurt- LOVE)
  • 1/2 lb. organic strawberries diced
  • 3 ounces organic blueberries
  • You will also need 4 9 ounce- sized, clear plastic cups.
Instructions
  1. Place 3/4 cup graham cookies in a large plastic baggie. Use the back of a measuring cup to smash the cookies into crumbs (great kid activity). Set cookie crumbs aside and dice strawberries.
  2. Begin layering ingredients in cups any way that you please. I started with a couple tablespoons yogurt, then 1 tablespoon cookie crumbs, next fruit. Continue layering until all ingredients have been used or until you have parfaits of desired size.
  3. Store in fridge until you are ready to enjoy!
Recipe Notes

I did not include nutritional information because calories and other specifics can vary quite a bit with these parfaits. They can be very low calorie, by using fat-free yogurt and graham crumbs sparingly.
