Hello, foodie friends! I hope everyone’s week is absolutely lovely, so far. Mine is going well and as usual I’ve been enjoying plenty of yummy foods. 🙂

Surprisingly, I’ve been changing things up for breakfast. The past few days, I’ve enjoyed scrambled eggs with fig butter toast, egg, cheese and sausage sandwiches from Evol Foods (love those), flourless pumpkin pancakes, pumpkin banana oatmeal and overnight pumpkin oatmeal. I’m working on creating a pumpkin overnight oat recipe for the blog; so I’ve been doing a bit of experimenting. I should have something posted by next week.

Mid-morning snacks haven’t changed so much. I’m still addicted to baby carrots! Another snack that I’ve been really loving is KOOEE! Super Snacks. They’re a mixture of jerky and trail mix- now, how could that be bad?!?! Best part is, there is nothing fake in the ingredient list- all good things. You guys should definitely check out these yummy, high-protein snacks!

Over the weekend, I remade my Panera Bread Copycat recipe for their Autumn Squash Soup– just as delicious as I remember. You guys may want to whip this up soon… it’s one of the most popular recipes on the blog with great reader feedback.

My afternoon snack is still consisting of an apple- you know what they say- an apple a day. Lately, I’ve been pairing my apple snack with pumpkin pie cookie dough dip. Great pairing if I do say so myself!

For dinner, on Sunday, I made one of the most comforting Fall foods I could dream up- Shepherd’s Pie with sweet potato. It turned out fabulous. I can’t wait to share!

And my nightly snack of choice has been Outshine Fruit and Veggie Bars. A frozen treat my be the furthest thing from your mind, but here in Texas it’s still pretty warm. And these are so flavorful with all good-for-you ingredients!
