Recent Eats and Treats
Hey there, foodie peeps! It’s been a couple of weeks since I’ve shared my recent eats and treats, so I figured it was time to round them up and share. I was afraid you guys may get a bit bored with What I Ate Wednesday posts, but according to the blog reader survey, y’all are down with a little glimpse of what I’ve been eating lately.
I will tell you it’s been really delicious around these parts. I’ve been eating my normal healthy meals, but I’ve been increasing the protein where I can and I’ve also been conscious about moderation. I’m eating what I want, just choosing to not go overboard. Eating clean and lifting weight really works for toning up… but you knew that already! Since the first of January, when I decided to stick to some fitness goals, up my protein, eat fairly clean and not go overboard with the after dinner snacking (my weakness); I’ve dropped over 5 pounds and I’m wearing clothes I haven’t worn in over a year. Yippee!
Let’s get this recent eats and treats show down started with cooooofffffeeee… aka my favorite meal of the day! I had another discount from Keurig and so I ordered my two latest favorites Toasted Amaretto and Wild Mountain Blueberry.
For breakfast during the week before work, I either go with scrambled eggs with chopped spinach or eggy oatmeal, but this weekend I made the most delicious waffle ever. Have you ever tried a savory waffle? They are darn good and, of course, I had to add just a little bit of sweetness with a drizzle of honey.
For lunch during the work week I made a double batch of skinny Greek yogurt chicken salad to last me through the week. I either eat it wrap style or piled on a bed of spinach with other salad veggies. Love this stuff and it’s packed with protein!
Pretty much everyday, either before or after my workout, I have a Quest Protein bar. I cannot get enough!! It’s got to be either cookies and cream or chocolate chip cookie dough (seen below). (Source for picture below + great review of all bar flavors)
I’ve also been enjoying smoothies as a snack or lunch option, especially on weekends when I have easy access to my Blendtec. I rounded up 5 of my recent favorites in my post yesterday- check out my 5 favorite nutritious delicious smoothie recipes. If I had to pick a favorite, it would probably be the Spinach Date Smoothie. I absolutely love the addition of orange juice- it’s so citrusy and refreshing!
For dinner, I’ve been eating lots of chicken breast salads with sweet potatoes. I did change it up one day and made adobo chicken wraps. They were so easy, light and delicious!
I bought a huge amount of pre-chopped butternut squash from Costco and it really needed to be used, so Monday night I made two other bloggers’ recipes. They both turned out awesome, so I wanted to share. The slow cooker butternut squash soup from Two Peas and Their Pod was so easy and tasty. I didn’t have a chance to make the maple roasted chickpeas, but I bet that would be a lovely combo. The other butternut squash recipe I made was the Carrot Butternut Whole Grain Muffins from Peas and Crayons. Holy yum… these suckers were fantabulous! The only change I made was to use all whole wheat flour. They were moist, slightly sweet and absolutely delish. They paired so well with my morning scrambled eggs and then I had about half of one crumbled in some yogurt before bed- such a great combo.
