Hello, friendly faces! How is everyone’s week shapen up? All I can say is I sure am glad it’s a short week, for me. This girl who never gets sick, has a cough that just won’t go away… ugh! Enough about me, though. Lets get to the good stuff- FOOD!

It’s What I Ate Wednesday and I’m sharing some delicious recent eats and treats I’ve been enjoying lately. Even though the cough plague has hit this household, we’re still managing to eat pretty darn good- ha!

There’s always plenty of coffee brewing over here, but I don’t have any pictures today. I’ve been drinking Coconut Mocha for awhile and just recently tried a new flavor that I just have to let you guys know about. Toasted Amaretto is the Bomb, with a capital B!

For my favorite meal of the day, I’ve been rotating between two different options. Sometimes I’ll have scrambled eggs (2 eggs + 1/3 cup liquid egg whites) and a muffin or pancake. Or, it’s my favorite- banana or banana and pumpkin whipped oatmeal with 1/4 cup liquid egg white mixed in. If you’ve never tried stirring egg white into your oats, you may be thinking I’ve really went off the deep end. But, I promise, it doesn’t change the taste and adds a wonderful creaminess to your oats. The first time I tried egg white oatmeal, I followed Brittany’s recipe. Now, I loosely follow it and use my own measurements and add-ins.

Lunches, lately, have been leftovers of whatever dinner I make. Most workdays, I’ve been bringing salads and a small chicken breast or a sweet potato and chicken breast. Nothing too exciting. I recently made this Easy Gluten-Free Taco Mac and Cheese and we had leftovers for days. I’ll be sharing this yummy mac and cheese with you in a couple of weeks- it’s a winner!

Thanks to the sweet people at Quest, my snack or pre-workout fuel of choice has been either my favorite Cookies & Cream Quest Protein Bar or the equally tasty S’mores flavor. But, yesterday, I had a vanilla Chobani Simply 100 Greek yogurt with raspberries- simple and yummy. Can’t wait to try the new flavors, I just came across on their site.

For dinner, I’m sharing my meal from Sunday night. Brad and I did some grilling- it’s been too long. We actually had a spell of really nice weather and I needed to try out some grilling tools for a blog post I’m working on for Kraft.

Our BBQ Grilled Chicken Salads turned out so good. I’m actually thinking about recreating them again this coming weekend. I might get the recipe up tomorrow, but if not tomorrow, definitely Monday.

I’ve been passing up dessert lately. I know… boring… I’m working at those fitness goals, though. However, a couple of weekends ago, my WHOLE family absolutely devoured this healthier apple crumble. It just happens to be vegan and gluten-free, too. A must make if you’re interested in something sweet, but good for you too!
