My 16 Favorite Recipes of 2016
Every time I publish a new recipe, it’s my new favorite recipe. Honestly. I love them all, so it wasn’t easy to pick out my favorite recipes of the year. Below, you’ll find recipes that have made it into my regular meal rotation and deserve a little extra attention. A few of my favorite recipes from the year were already covered in my top 10 reader’s favorite recipes round up, (I’m looking at you, Low Carb Protein Waffles, Best Homemade Taco Seasoning and Copycat Panera Bread’s Fuji Apple Chicken Salad) but there were still plenty to choose from. In fact, I busted my top 10 limit and increased it to 16 favorite recipes of 2016. Whoops! Here they are in no particular order.
Healthy Cranberry Pear Crisp
So I said this list was in no particular order but I hereby declare this Healthy Cranberry Pear Crisp my #1 favorite recipe from 2016 – there, I said it! Since first making it in November, I’ve already made it multiple times. It’s one of those recipes that can be whipped up in less than 10 minutes and it’s also one of those desserts you can’t stop eating. You know the kind – when you keep going back to the pie plate for just one more bite! MVP of 2016, for sure!
Healthy Apple Cinnamon Baked Oatmeal
I love to make this on Sunday and then portion out servings to enjoy for the rest of the week. That is, if I can hold off from eating a couple of portions when it comes out of the oven. Just as scrumptious and addicting as dessert, and another recipe you just can’t stop eating once you get started.
Flourless Pumpkin Protein Pancakes
On low-carb days, these are my go-to. Many times I turn them into waffles to avoid the pancake flip. Either way you make them, one thing’s for sure – they’re delicious!
Healthy Curried Chicken Salad
Sweet grapes, juicy Honeycrisp apple and crunchy celery combine with lean chicken and the most flavorful curry seasoned dressing to create what some may say is the BEST Curried Chicken Salad they’ve ever tasted. And, yes, I just might be one of those people. The sweet and savory flavors in this chicken salad are wonderful!
Best Ever Paleo Pan Fried Chicken
Even my picky kiddos devour this chicken! I make it at least once a week and sometimes more. It pairs well with pretty much any side and is also fabulous served in or over salad.
Mexican Chopped Chicken Salad
Another favorite chicken salad! This salad can be very addicting served as a dip, but is equally delicious wrapped up in a tortilla.
Strawberry Apple Chicken Salad
A quick and tasty Strawberry Apple Chicken Salad, filled with plump juicy strawberries, sweet apple slices, crunchy almonds and topped off with the most wonderful poppy seed dressing you’ve ever tasted!
Skinny Egg White Omelet
This is my lean, clean go-to when I want something light, yet filling. Not only do I eat this for breakfast at least once a week, I also enjoy it for lunch and dinner frequently.
Maple Cinnamon Almond Butter
I usually make my own nut butters and this is my favorite flavor by far. If you have a sweet tooth, like me, you’ll go crazy for this.
Loaded Pizza on Cauliflower Crust
If you’ve been disappointed by cauliflower crust in the past, you MUST give this recipe a try. I promise there will be no disappointment with this one. The crust cooks up amazingly well and tastes incredible!
Low Carb Protein Waffles
Another MVP of 2016! I literally make this waffle sometimes multiple times in one day – for breakfast and then again for dessert.
Copycat Panera Bread’s Fuji Apple Chicken Salad
You may have noticed by now that I LOVE a good chicken salad. This is my all-time favorite salad to order out, so recreating it was a priority. With the help of Panera Bread Fuji Apple Vinaigrette, which is available in the produce department of most grocery stores, this salad tastes exactly like the classic.
The Best Homemade Taco Seasoning
We always have a batch of this made up and ready to go. A good taco seasoning without pesky preservatives or other additives is best made in your own kitchen. You get to control the spice and flavor and everything is all-natural.
Super Simple Stir Fry
This is a favorite quick and easy dinner that I make often. Sometimes I use a different protein, veggies and sauces, but I always keep it simple, easy and tasty.
Blueberry Banana Muffins with Almond Streusel
Muffins are one of my favorite things to bake… and eat! This one is absolutely perfect with the banana working as a natural sweetener and the almond streusel topping adding a little something extra special.
Easy Cream Cheese Pie
This recipe has been in my family for as long as I can remember. The results are always the same when I whip it up – everyone is VERY happy and there’s not a single piece left at the end of the day. Landen REALLY loves this dessert and requests it on the regular. I made it for his birthday this past year and then again at Christmas.
