Hope everyone’s weekend is off to a fantastic start! Friday night was spectacular!! Madelyn’s dance team won first place for age group and then won the big trophy for top score of the entire division…..both for the 2nd weekend in a row. Needless to say, it was a very exciting night.

Now onto meal planning……
I’ve actually never done a meal plan post, but I do typically plan out my meals for the week either on Sunday or Saturday. The last few weekends I’ve been able to swing by Costco and Trader Joe’s (about 45 mins from my house) because I’ve had to be in the area for other reasons. This weekend, I plan to only hit up my local HEB (about 5 mins from my house).
So here’s the dinner plan…… Lunches are usually salads or leftovers and I don’t like to plan for breakfast. I just go with whatever I feel like in the morning.
Saturday- Triple-Bean Veggie Burgers with Sweet Potato Fries
Monday- Turkey Taco Casserole
Tuesday- Wing it….Landen has gymnastics. I’ll either bring something to the gym, like a big salad bowl, left over Turkey Taco Casserole or grab something.
Wednesday- It’s Madelyn’s 7th b-day, so I’m making one of her favorite meals, this Cheesy Pasta Bake served with roasted Brussels sprouts and a side salad. I haven’t decided on a dessert, but I’ll let ya’ll know!
Friday- Wing it…..probably grab pickup from Pastafina (our favorite Italian restaurant near home).
Saturday- Landen has a meet in Garland, TX. Not sure what time it will be over or what time we’ll be home, but we’ll most likely eat out.
The grocery list……..
These are only the things that I need. I’m not going to list the staples that I already have or things that I just don’t need. For example, I buy a large bag of organic chicken breasts when I go to Costco, so I won’t be needing chicken for the Hummus-Crusted Chicken.
