A super healthy quinoa muffin recipe, that’s also really scrumptious. There’s no oil, butter or sugar in this recipe; except for the chocolate chips, which add a lovely sweetness to these protein packed muffins.

I hope all of you had a wonderful weekend and if you’re a mama, hopefully you had an extra special weekend! I’m linking up with Katie from Healthy Diva Life to share with you some marvelous things from this weekend; including a new muffin recipe. This weekend was definitely MARVELOUS! I got in a great workout on Saturday and Sunday; which makes us all feel better. Am I right? On Saturday, I ran 9 miles and then did a Body Pump class. On Sunday, I actually ran outside for the first time in about a month and got in 7 miles. The weather felt great, but I’m always surprised by how much harder my outside runs are and I even use an incline when I run on the treadmill. Anyone else notice this?

For Mother’s day, my three sweeties surprised me with James Avery earrings and a charm to add to my charm bracelet. I LOVE James Avery, so I was pretty excited. My mom, sister and I also enjoyed pedicures and then dinner at our favorite Italian restaurant. A perfect Mother’s Day!

I started a new book, These Things Hidden, this weekend and so far so good. Have any of you read it? I went through quite a reading funk with books, so to have two good reads in a row is for sure a marvelous thing. I’m really looking forward to Emily Giffin’s new book, The One and Only, coming out May 20th. I’ve read and loved all of her other books. I’m thinking that I’ll save it for a beach read in Destin. 36 more days, but who’s counting?!?!

I didn’t spend too much time in the kitchen, this weekend and I had some bad luck and some good luck. I definitely had good luck with these Chocolate Chip Quinoa Oatmeal Muffins! I have never had quinoa in baked goods, but I keep seeing it in cookies, muffins, pancakes and the list goes on. You guys know how I adore a good muffin, so I figured it was time to add one of my favorite plant proteins to one of my favorite breakfast foods. I don’t know why I waited so long…. the texture has a lovely moistness and subtle nuttiness from the quinoa. I can’t wait to try some different variations…. maybe with banana, blueberries and/or Greek yogurt.

I ate my muffin along with some fruit and an egg. This breakfast powered me through my 7 mile run without a problem. I’m anxious to try it crumbled over some Greek yogurt for breakfast this morning. Feel free to sub dried fruit for the cranberries. I actually used 1/2 chocolate chips and 1/2 currants (small raisins).

Chocolate Chip Quinoa Oatmeal Muffins

Ingredients
  • 1 cup cooked quinoa cooled
  • 2 cups old fashioned rolled oats use gluten-free as needed
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2-3 packets Stevia optional
  • 2 egg whites or 1/3 cup liquid egg whites or 1 large egg
  • 1 cup almond milk any milk works
  • 2 teaspoons vanilla extract
  • 1/2 cup mini chocolate chips or a combination of currants small raisins and mini chocolate chips
Instructions
  1. Preheat oven to 350º F. Line a muffin tin with paper liners or spray with cooking spray.
  2. In a medium to large bowl, whisk together quinoa, oats, baking powder, salt and Stevia.
  3. Stir in egg whites, milk and vanilla. Mix in chocolate chips. Divide among 10 muffin cups. Fill muffin cups full, as these muffins will not rise.
  4. Bake until a toothpick inserted in the center of a muffin comes out clean, about 30-35 minutes. Cool muffins in pan for 10 minutes. For easy removal from muffin cups, slide a butter knife along the side of the cup. Enjoy!
