New and very different recipe coming your way today…..

I’ve loved chia seeds for a very long time and I’ve used them in a myriad of recipes. I’ve also written complete posts all about how special chia seeds are. The one thing I’ve still been holding out on is Chia Seed Pudding. Well, not any longer, folks!!

I googled “Chia Seed Pudding” and as I expected, there are quite a few different options. I found a basic Vanilla Chia Pudding recipe from The Detoxinista that I jazzed up just a bit.

Honey Banana Chia Pudding (serves 1)

Ingredients:
3 tablespoons chia seeds
1 cup almond milk
1 tablespoon honey
1 mashed ripe banana
toppings; berries, nutbutter, nuts, shredded coconut….

Instructions:
Combine all of the ingredients in a cereal-sized bowl. Cover and allow pudding to chill overnight.
When you’re ready to enjoy your pudding, top with your favorites!

I really enjoyed the chia seed pudding as something different for breakfast or a snack. It is way more filling than you might think….I couldn’t even finish the bowl of  pudding I was having for breakfast.
