Having healthy meals prepped and ready for me to grab on my way out to work is a saving grace. It means no spending money on less than healthy grab-n-go fast food type meals. It also means less time spent throwing together a nutritious lunch before heading out the door. Win-win!
You guys know I’m a pretty big fan of make-ahead meal prep bowls. I’ve already posted lots of these type bowls…such as the Sweet Potato Hash Breakfast Bowls and my Pineapple Salsa Fish Taco Bowls. I thought it was time to switch it up a bit.
Let’s add some tasty, super convenient chicken meatballs to the mix! I used Cooked Perfect® Meatballs to make this the quickest meal prep in the history of meal prep. That’s something we can all appreciate… am I right?!

Just think about this: 15 minutes effort to ensure that you’ll have a healthy, satisfying lunch waiting for you for FOUR days. Doesn’t that sound awesome? It is.
Thanks to the Cooked Perfect Meatballs, nothing in this meal needs to be cooked ahead of time. Simply add meatballs, zucchini noodles, diced onion and cooked rice to your bowls. Store these bowls with a lid in your fridge and when you’re ready for lunch, just warm up the bowl for the instructed amount of time for the meatballs and enjoy!

I will be using these Cooked Perfect Meatballs all summer long to compliment my favorite summer activities, from large poolside parties to just hanging out with the family. When we’ve got a million things going on during the summer, it’s nice to have an easy, crowd-pleasing food to serve up quick.
- 12 Cooked Perfect Meatballs
- 1-2 cups cooked rice
- 1 fresh pineapple , diced (about 2 cups)
- ¼-1/2 cup diced red onion
- 10-12 ounces zucchini noodles (about 4 zucchinis noodled)*
- Optional: Sriracha sauce and fresh cilantro for topping
- Divide all ingredients evenly into 4 bowls or storage containers.
Seal each container with lids and place in the fridge. When ready to eat- remove lid and heat in microwave for about 1 minute and 40 seconds or until heated through. Enjoy!
*There is no need to pre-cook zucchini noodles. They will cook when heating up your lunch.
