Happy Halloween and Crinkle Cookie Truffles
Happy Halloween, friends!!! Whether you’re taking the kids out trick-or-treating or staying home to pass out candy; I hope you’ve got a fun evening planned. I’ll be out trick-or-treating with my kiddos and nieces…. the weather is supposed to be super nice, so I’m looking forward to a great evening with my mom, sister and all of the kids.
Now how about something sweet on this beautiful Halloween day? That’s what I thought! 😉 I came across a recipe for little crinkle cookie balls in an old (7/8/13) People magazine. They looked so yummy and the ingredients looked like they would be pretty easy to healthify, so I decided to do a little experimenting. They ended up turning out so wonderful and my whole family gobbled them up in less than a day….oops.
- ¼ cup coconut oil melted
- 1/3 cup unsweetened cocoa
- 1 large egg
- 1/3 cup sugar I used coconut sugar, but regular sugar or xylitol would work too.
- 2 tbsp. honey
- ½ tsp. salt
- 1 tsp. vanilla extract
- 1 cup whole wheat pastry flour or all-purpose flour
- ¾ tsp. baking powder
- 1/3 cup mini chocolate chips I like Enjoy Life brand.
- ¼ cup powdered sugar
Preheat oven to 350 degrees F.
Whisk coconut oil and cocoa together, in a large bowl until smooth; set aside.
Whisk together eggs, sugar, salt and vanilla in a medium bowl until smooth. Gradually add egg mixture to chocolate mixture, whisking until well-blended.
Whisk flour and baking powder together in a small bowl. Stir flour mixture into chocolate until well-blended. Stir in chocolate chips. Cover and chill dough for 30 minutes or until dough is firm enough to handle easily.
Place powdered sugar in a shallow bowl. Scoop dough and form into ¾-inch balls; roll in powdered sugar. Arrange cookies on baking sheet. Bake for 5 to 8 minutes. Cool cookies 1 minute on baking sheet; transfer to wire rack and cool completely.
Not only are these cookies really tasty, they’re also really pretty. My pictures just don’t do them justice. If you have any holiday parties coming up, you might want to consider bringing these along. Believe me, all of your friends will thank you!
