Hi, friends!! As you’re reading this, I’m most likely on my way to work or at work…. yuck. At least my first day back after summer vacation will be an easy day. Okay, enough with the negative talk….. and Happy What I Ate Wednesday!


All of Michelle and Lori’s love for plantains persuaded me to pick up some plantains last time I was at the grocery store. For breakfast, I decided to give one a try and I used the Purely Twins recipe for Plantain Pancakes {blend one plantain with 3 eggs and 1-and-a-1/2 tsp coconut oil}. I really liked them a lot!! This was my first time having plantains and they have a tangier taste than bananas, but are still sweet. I liked how the pancakes were really thin, almost crepe-like. I’ve also never mixed my pancakes up in the Vitamix or a blender before. It worked perfectly for pouring out the pancake batter onto the skillet.

Shortly after breakfast I took the kids to their dentist appointment and then I got my car washed and ran a couple of other errands. By the time we got back home, I was starving. I started snacking on my new nutbutter hummus {recipe coming soon} with baby carrots and crackers; while I made my beastly veggie salad.

I topped my mixed greens with quinoa, beets, tomatoes, zucchini, broccoli, mushrooms, champagne pear vinaigrette from Trader Joe’s, salt & pepper almond accents from Wonderful brand {see giveaway below} and enjoyed some Mary’s Gone Crackers on the side.

After lunch, cleaning the house and doing a little blogging; Madelyn and I decided we needed to bake something sweet. Another new recipe coming soon are the Banana Date Blondies. They turned out really delicious and I can’t wait to share them with you soon!

We snacked on some blondies and then I hopped on the treadmill to get a run in and catch-up on Bachelorette. After I was finished running, Brad was home and I visited with him and fixed the kids a snack. I snacked on some Wonderful almonds and organic dried apricots. I found these apricots at Costco and I love that there are no added preservatives. The only ingredient is organic apricots.

This evening was gymnastics for Landen and horse riding lessons for Madelyn, so after our snacks we headed out the door. We were away from home all evening with all of the kids activities. When we finally arrived back home at about 9:15, the kids were starving. I fixed them something to eat, but I wasn’t all that hungry…. maybe snacking on all of those Banana Date Blondies. 😉  I have to say my dinner was pretty delicious, though! I finally tried Chobani’s Key Lime Pie Greek yogurt….. BEST EVER!!!!!! I topped my yogurt with vanilla chex and blueberries. I’m so glad that I bought the 4-pack of yogurt because I will for sure be wanting this again tomorrow!
