Cranberry Apple Muscle Muffins have a festive burst of flavor and plenty of protein to power your day of gifting!
I was already mixing up a batch of my favorite blueberry muffins (not on the blog yet) when it hit me, why not make these extra special for the holidays and throw in some cranberries? I needed a way to use them up anyway after making cranberry sauce for Thanksgiving. Such a good idea! These muffins baked up so perfectly!
They’re slightly sweet while having a touch of tartness. The cranberries give the muffins moistness and a fabulous fruity flavor. This worked so well with the applesauce that I used to replace the oil in this recipe.
I can always tell how good something is depending on how fast whatever it is disappears. Muffins rarely last long around here. I never even get to the point of freezing them. If we weren’t such muffin lovers, freezing them would be an excellent idea though.
To really pack in the protein I used egg whites, protein powder and cottage cheese. I was sure to use a California cottage cheese – the one with the Real California Milk seal. I’m super excited to partner with Real California Milk for a very special program! From now until December 31, 2017, spot the Seal for Good and share your photos with #SealsforGood of the Real California Milk seal to help the families affected by wildfires in CA and Hurricane Irma and Hurricane Harvey in Florida and Texas who need it most. For every submission, Real California Milk will donate $5 to the Great American Milk Drive to help families affected by the wildfires and hurricanes. No purchase necessary. You can learn more about this here.
