Cranberry Apple Muscle Muffins
Cranberry Apple Muscle Muffins have a festive burst of flavor and plenty of protein to power your day of gifting!
I was already mixing up a batch of my favorite blueberry muffins (not on the blog yet) when it hit me, why not make these extra special for the holidays and throw in some cranberries? I needed a way to use them up anyway after making cranberry sauce for Thanksgiving. Such a good idea! These muffins baked up so perfectly!
They’re slightly sweet while having a touch of tartness. The cranberries give the muffins moistness and a fabulous fruity flavor. This worked so well with the applesauce that I used to replace the oil in this recipe.
I can always tell how good something is depending on how fast whatever it is disappears. Muffins rarely last long around here. I never even get to the point of freezing them. If we weren’t such muffin lovers, freezing them would be an excellent idea though.

These muffins have a festive burst of flavor and plenty of protein to power your day of gifting!
- 1 cup egg whites
- 1 egg
- 1 1/2 cup old-fashioned rolled oats
- 3 packets stevia (optional)
- 1/2 cup California cottage cheese
- 1/2 cup applesauce or 1 banana or 1/2 cup pumpkin purée
- 1 scoop vanilla IdealLean Protein or 26 grams favorite protein powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon or pumpkin pie spice
- 1 teaspoon vanilla extract
- 1 cup fresh cranberries

Blend all ingredients except the cranberries in the blender and pour into well greased muffin tins. Press berries into the muffin batter spreading the cranberries evenly between all muffins. Bake at 350 degrees for approx 20 minutes.
*If you don't have cranberries on hand, blueberries make a great substitute.
