Coconut Flour Chocolate Chip Cookies (updated)
Well hello there, friends. Hope all of you are having a great weekend. I’ve had a very nice 3-day weekend, due to bad weather on Friday…. nothing better than that. Oh except for maybe a Trader Joe and Costco run on Sunday! We’re all stocked up again! The plan for today is to do some cooking, food photography, blogging, house cleaning and laundry. Nothing too exciting, but I always love cooking up new things…. and old things.
Speaking of old things, I’ve finally made my Coconut Flour Chocolate Chip Cookies again and updated the hideous pictures from the July 2013 post. I know my photography skills are a work in progress and definitely not to the standard that I want them to be, but you have to admit they’re slightly better than they were 6 months ago. Plus reshooting these cookies gave me an excellent excuse to bake them again.
These coconut flour cookies are the perfect way to satisfy your inner cookie monster! With the use of coconut flour, coconut milk, and coconut sugar these are gluten-free and Paleo. They definitely have a coconutty flavor, so if coconut’s not your thing, try my Soft and Fluffy Chocolate Chip Sweet Potato Cookies.
Something to think about….
Have you ever used coconut flour when baking? It’s a little tricky. You have to use quite a bit of liquid because coconut flour is so dry.
