Hi, friends! Hope you’re off to a great start to your weekend!

This is all you need {plus salt} to create MAJOR deliciousness!!

Making almond butter is seriously much easier than I ever anticipated. I’m going to be an almond butter making machine. 😉
First things first, add 2 cups of almonds and 1/2 cup of unsweetened shredded coconut to the bowl of the food processor and start grinding on high….that’s the only speed that mine has.
During the grinding process, my food processor got a little warm, but worked like a charm. I’ve had this food processor for about a year and been nothing but happy with it.

About two minutes in, the almond/coconut mixture started to look a bit pasty. I stopped the processor and scrapped down the sides, then started the food processor up again.

About 7 minutes into the grinding process, I added 1 tbsp of pure coconut oil that I melted in the microwave prior to adding to the almond butter.

I processed the almond butter for another two minutes and by that time it was looking pretty creamy.  As soon as I took the lid off of the food processor, I could smell the most heavenly coconut smell and couldn’t wait for a taste. It tasted wonderful, but needed a bit of salt and I wanted it to be a little less pasty. I processed in 1/4 tsp of salt, tasted again, and added another 1/4 tsp of salt. Many of you may enjoy your nutbutter with only 1/2 tsp of salt, but I like mine salty and added another 1/4 tsp. I used regular table salt, so if you use sea salt- the amount that you need may vary a bit. I processed for another 5 minutes, stopping only one more time to scrap down the sides.

Yes, I was that girl licking the blade of the food processor….do you really blame me? A little dangerous, but well worth it.

I cannot believe I waited so long to make my own nutbutter and now that I’ve finally dipped my feet in the water; I can’t stop coming up with different flavor combos in my head to try.

My favorite snack just got waaay better!

I sure wish I would have experimented with this earlier because what great Christmas gifts this would make….I’ll be keeping my eye out for little jars for next year!

Coconut Almond Butter
Lovely coconut infused almond butter with no artificial ingredients.
  • 2 cups raw almonds
  • 1/2 cup unsweetened shredded coconut
  • 1 tablespoon coconut oil melted
  • 3/4 tsp salt or desired amount (I used table salt.)
  1. Add almonds and shredded coconut to the bowl of the food processor.
  2. Process on high for a couple of minutes and stop processor to scrape down sides as needed.
  3. Continue to process. Stop after about 7 minutes to scrap down sides and add coconut oil and salt. If you don't like your nutbutter very salty, I would suggest adding 1/4 tsp at a time, processing and then tasting.
  4. Continue to process for about 5-8 minutes or until your almond butter has reached desired consistency.
