Cilantro Jalapeno Hummus
Hi guys! Hope everyone had a great Memorial weekend. I stayed home all day on Monday, which was fine with me after a very busy week. I did get in another 6 mile run and my Body Revolution strength workout. I felt great about that! I also did some cleaning, laundry and recipe creating. Two out of three turned out fantastic, but, unfortunately, the almond butter avocado cookies were a fail. Even though according to the rest of the family, they were very tasty. I thought they were a bit too sweet and way too flat.
I have plans to work on this recipe and hopefully after a few tweaks, the cookies will come out the way that I envisioned.
One of the recipes that did turn out was my Cilantro Jalapeno Hummus. The other day, on the blog, someone mentioned Trader Joe’s Cilantro Jalapeno and how fabulous it was. Well, when I was at TJ’s this weekend; I looked for the hummus, but I guess they were out because it was nowhere to be found. I was so disappointed and had really been wanting to try it, so I just decided to try coming up with my own Cilantro Jalapeno Hummus.
Cilantro Jalapeno Hummus (adapted from the Best Ever Original Hummus)
1 small jalapeno, seeded
2 garlic cloves
a generous handful of cilantro (about 1 cup)
1 (15 oz) can no-sodium chickpeas (garbanzo beans), drained and rinsed
1/4 cup (about 1 lemon) fresh lemon juice, or to taste
3 tbsp tahini
1/2 tsp salt
Mince jalapeno and garlic cloves in the bowl of a food processor.
Add cilantro, chickpeas, lemon juice, tahini, and salt. Process until very smooth, about 1 minute.
Store in a tightly sealed container in the fridge for up to 2 weeks.
The hummus is, for sure, a keeper! Brad and I both loved it. I knew he would be an easy sell because he LOVES cilantro. I’m not one that likes my food real spicy, but the jalapeno adds the perfect amount of kick. It paired great with raw veggies, multigrain chips and Kashi 7-grain crackers.
