As I’ve increased the amount of strength training I’m doing; I’m trying to be conscious of how much protein I’m taking in. Eating lean chicken breast has been the easiest way for me to increase my protein intake. Plain grilled or baked chicken breast gets really boring, though. To jazz things up and give my chicken breast more flavor, while adding even more protein; I used Natural Reduced Fat Colby Jack Cheese Sticks from Weight Watchers to stuff the chicken breasts.

This stuffed broccoli cheese chicken recipe only takes a little extra time, but results in an abundance of tastiness that you just don’t get from a regular baked chicken breast. With the lovely cheesiness from Weight Watchers Cheese Sticks, this meal tastes like a major indulgence without sacrificing weight-loss goals and healthy eating. The creamy reduced fat colby jack cheese has less than 100 calories per stick, is made with 2 percent milk and provides an excellent source of calcium.

The broccoli cheese flavor combination is one of my favorites and as an added plus, you get a serving of veggies…. win-win. I tried this same recipe without breading the chicken and while it was very tasty, the panko crumb breading takes the taste and texture to a whole new level of deliciousness. I would definitely recommend it!

Stuffed Broccoli Cheese Chicken

A healthy flavorful chicken recipe, packed with protein and cheesy goodness!
Ingredients
  • 2 chicken breasts about 5-6 oz. each
  • 1 cup whole wheat flour
  • 1 cup panko bread crumbs
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon basil
  • 1/2 teaspoon paprika
  • 2 pieces Natural Reduced Fat Colby Jack Cheese Sticks
  • 1/2 cup broccoli florets finely chopped
Instructions
  1. Preheat oven to 350 degrees F. Line a large baking sheet or dish with aluminum foil and lightly coat in cooking spray.
  2. Cut the center of the chicken breast (not all the way through) using a sharp knife or kitchen shears.
  3. In a shallow bowl, combine flour with salt & pepper. In a second shallow bowl, lightly beat the egg. In a third shallow bowl, combine the panko with the basil, garlic powder and paprika.
  4. Dredge chicken breasts in the flour to coat, shaking off any excess flour. Then dip in the egg and then coat with the breadcrumb mixture. Place on the prepared baking sheet and repeat with the remaining chicken breast.
  5. Stuff each chicken breast with one cheese stick and about 1/4 cup broccoli florets.
  6. Bake in preheated oven for about 30 minutes (time will depend on how thick your chicken breasts are) and until chicken is cooked through.
