Happy Friday! How about dessert, this weekend? I think that’s a very good idea. And these are perfect because they look fancy, but they’re really quite simple.

Just imagine a rich, fudgy, decadent, oh so tasty brownie filled with even more deliciousness! Let your imagination run wild with these Brownie Fruit Cups. You can fill your brownie cup with a variety of different toppings; from nuts or sprinkles to chocolate drizzle or a dollop of peanut butter to fresh fruit and whipped topping.

I brought my brownie fruit cups over to my parent’s for my Dad’s birthday celebration and they were a huge hit with the whole family. Most of the kiddos preferred their brownie cups plain or just with whipped topping and a drizzle of chocolate. You can use your favorite boxed brownie mix or homemade. I used Kodiak Cakes Big Bear Brownies and they were so delish! I also felt good knowing the kids were eating a brownie made with whole wheat flour and all natural ingredients.

These brownie fruit cups may look pretty jazzy, but they’re actually really easy. Just divide brownie mix among muffin cups- I used a mini muffin baking pan. Fill the cups about half-way full and then when you remove from the oven, press down on the brownie to form a cup. If filled my brownie cups with whipped topping and fruit, but these would be awesome filled with peanut butter, coconut cream, yogurt and the list goes on.

Ingredients
  • 1 Box Kodiak Cakes Big Bear Brownies
  • ½ cup or a 5.3 oz. container plain or vanilla Greek yogurt
  • 2 tablespoons olive oil melted butter or melted coconut oil
  • 2 tablespoons water
  • 2 eggs
  • Filling suggestions; mixed berries banana slices, ice cream, whipped cream, sprinkles, chocolate shavings, peanut butter, chocolate drizzle, finely chopped nuts (These brownies are pretty great without any toppings too!)
Instructions
  1. Preheat oven to 350 degrees F. and spray a mini muffin baking pan with cooking spray.
  2. Combine package contents and all other ingredients in a mixing bowl and hand stir until smooth.
  3. Spoon batter into mini muffin cups, filling each one less than ½ full.
  4. Bake for 20 minutes. Unless you have two muffin pans, you’ll have to do this in two batches for 21 mini brownie cups.
  5. Immediately after removing brownies from the oven press a second muffin pan, a large spoon, ice cream scoop or simply use your thumbs to press the tops of brownies to form a cup-like brownie. (I found that using my fingers and thumbs worked best. It’s hot, but doable.)
  6. Allow brownie cups to cool about 5 minutes and then fill them with your favorite filling options. Enjoy!
