This Blackberry Quinoa Kale Salad is not just any old salad…. no boring salads around here. Many people are a little intimidated by kale and think it’s too bitter and earthy…. I’ve got a trick for that. And the Meyer Lemon Vinaigrette… you guys are going to want to put this stuff on everything. With a light lemony flavor and subtle, but distinct olive taste from the Pompeian Extra Virgin Olive Oil, this vinaigrette is spot on…. just absolutely delightful and helps to create the perfect spring time meal. I have a feeling I’m going to be making this salad right through summer and beyond, it’s a keeper!

Blackberry Quinoa Kale Salad with Meyer Lemon Vinaigrette- bursting with flavor and antioxidants!

To take kale from harsh, strong and bitter; just give it a quick rubdown with an olive oil based vinaigrette. Massaging your salad may seem a little weird, but believe me it will transform your kale to a light, silky and sweet leafy green you’ll want to eat all season. It’s a super easy process…. I use about 1/2 to 1 tablespoon of Pompeian Extra Virgin Olive Oil and a little salt or a favorite olive oil based vinaigrette, like Meyer Lemon Vinaigrette and rub the oil into the leaves. You will notice the leaves go from rough to silky smooth. Keep massaging until your leaves are of desired tenderness, about 4-5 minutes. Not only does this method tenderize the kale leaves, but it’s also a great way to season the entire salad, so you’re not left with a puddle of vinaigrette at the bottom of the salad bowl.

Blackberry Quinoa Kale Salad with Meyer Lemon Vinaigrette
Light, flavorful, satisfying salad bursting with nutrients and antioxidant power!
Ingredients
For the salad:
  • 7-8 cups packed tightly chopped kale, stems removed
  • 1 avocado peeled and diced
  • 1/2 cup cooked quinoa or other grain such as brown rice, barley, couscous, or faro
  • 1/2 cup halved walnuts toasted
  • 1/4 heaping cup blackberries, cut in halves
  • 1/4 cup crumbled feta cheese
  • salt and pepper to taste
For the vinaigrette:
  • 1/4 cup extra virgin olive oil such as Pompeian brand
  • 1/4 cup apple cider vinegar
  • zest of 1 Meyer lemon
  • 3 tablespoons fresh squeezed Meyer lemon juice
  • 1 tablespoon honey raw and local is best
Instructions
  1. Whisk all vinaigrette ingredients together in a small bowl or jar.
  2. Place kale in a large salad serving bowl.
  3. Drizzle about 1/8 cup of the vinaigrette over the kale, toss to combine and massage vinaigrette into leaves, until kale is of desired tenderness.
  4. Add all salad ingredients to the kale, toss to combine and add more vinaigrette as desired. Add salt and pepper to taste. Enjoy!
