What I Ate Wednesday: Fun Food Finds

It’s What I Ate Wednesday, but we’re going to take a look at what I ate this weekend. Let’s face it, weekend eats are way more exciting than weekday eats. Wouldn’t you agree? I have so much more time to cook “real” meals and eat exactly what I want; instead of grabbing easy convenient food during the week.
The day ALWAYS starts with coffee and my favorite flavor lately is coconut mocha.
Breakfast, Saturday, was Amanda’s Cookie Dough Breakfast Bake. The pictures do not do this justice…. it was still a little dim when I had breakfast and I was super hungry. I adapted the recipe just a little because I didn’t have chocolate chips. Instead, I added a chopped dried fig. I seriously don’t know how chocolate chips could have made this bake any tastier. Dried figs are my jam! Dip one into almond butter and you’ll see what I mean!
My breakfast on Sunday, Monday and Tuesday just happened to be these Banana Oatmeal Muffins. If you’re a banana and oatmeal fan; you must try these. I love mine mashed up with almond milk, banana slices and peanut butter!
Lunch, Saturday, was this huge smoothie bowl. It is a recipe that I put together for a sponsored post, I’ll be sharing later this month. I’ve been craving another one like crazy! It was so refreshing with tons of different Summer flavors.
Lunch on Sunday was an egg avocado salad served wrap-style. I’ll be posting this recipe very soon. It was just what I needed to use up the rest of the boiled Easter eggs.
This past weekend, snacks were awesome; thanks to a very generous shipment from the people at Van’s! Please tell me you’re a regular Van’s customer! There are so many great things about this company; the market leader in gluten-free and allergy-friendly, natural and organic breakfast and snack foods.
My whole family has been enjoying Van’s snacks. The kiddos were especially fans of the chips. And why wouldn’t they be? Both the Nacho Cheese and BBQ chips are bursting with flavor and made with gluten-free oats, brown rice, millet, quinoa and amaranth. These guilt-free treats keep it real, containing no high fructose corn syrup, artificial ingredients, hydrogenated oils or GMO oils. My husband and I give the Fire-Roasted Veggie Crackers 5 stars. They were the perfect pair to my Sun-Dried Tomato Hummus.
The PB&J Bars that you see above are so scrumptious and the perfect after-school snack for the kids… and me. And if you want a gluten-free version of cheese-it crossed with a wheat thin; then you need to try the above crackers, Van’s Say Cheese! Crackers.
I talked about my Sunday dinner in this post. It was so delicious I’m looking forward to recreating it soon. In fact, Brad just mentioned yesterday; that broccoli stuff sure was good, you need to make that again soon and this time make more. 😉
My dessert kick, lately, has been either cottage cheese or Greek yogurt with fruit. Trying to up that protein!

Ha Ha that “broccoli stuff” will be added to our meal plan this week! It just sounds and looks so good. I mean if your husband was a fan, I’m just going to cross my fingers that Joshua is as well! Besides, he’s loved all the other recipes I’ve made of yours 🙂
Oh Amandas Oatmeal Bake looks really good!!
But I really can’t decide what I like the best – the muffins, the wrap and the smoothie bowl all intrigue me!!
I kind of love the idea of smashing up a muffin and eating it like oatmeal with milk and fruit — convenience at it’s tastiest 😀 And I’d have to say that one of the perks of being able to work from home is the fact that my weekday meals don’t differ too much from my weekend ones… although that might be a downside as well 😆
Oh yes my weekend meals are always way better than weekday! Especially with meal prepping I often feel like I eat the same thing all week long and really let lose on the weekends. That smoothie bowl looks so scrumptious I can’t wait to try it out and get the recipe.
I hope the Van’s giveaway is open to Canada!!!!
Your eats seriously look amazing! I agree that weekend food is way more fun because I normally have more time on the weekend. I will eat something at night time after dinner if I am still hungry so that I don’t go to bed starving. 🙂 If I’m not hungry I won’t eat anything though.

Sometimes my weekend meals are more interesting, but I’ve been working a lot of Saturdays at the hospital, so they’ve been very…desk-friendly. I try to make up for it by making myself something pretty for dinner, though : )
I always need a snack before bed. Even if I wasn’t a morning exerciser, I’d probably need it! I’ve never been able to go to bed on an empty stomach.
My daughter is big on Van’s waffles… the hubs loves them too with almond/peanut butter!!
My weekend eats are always a little bit more indulgent. As for dessert, I make it a point to have chocolate every day, even in weight loss mode! I love the Dove dark chocolate promises…so creamy and de-lish! And coffee, yes. EVERY. Day. Happy WIAW!

My oh y, can we say FOOD PORN! All your eats look delicious and coconut mocha coffee?! I don’t think I’ve tried that combo yet! So far coconut almond and coconut macaroon (basically coconut and vanilla) But chocolate and coconut in a coffee? I may have to give this a try!
My WIAW posts are almost always from the weekend for 2 reasons: 1) They are more interesting & 2) I am a lot more likely to remember to take pictures on the weekend than on a week day 😉

You might try deleting your cookies or previous history on your computer. It is an ongoing problem that I’m aware of, though. Oh everything looks so good as usual! I buy the Vans waffles for my son and hubby all the time but haven’t seen many of those other products. The bars look delicious!
I love Amanda’s oatmeal breakfast bake! There is a designated “snack time” in my house between dinner and bedtime. It’s the perfect time for a little chocolate!
