Apple Pie Overnight Oats

You guys! Fall is right around the corner. Are y’all excited? My mind (and appetite) is already in full swing fall EVERYTHING! Today, we’re kicking off the fall season (a tad early, but WHATEV) with these delicious Apple Pie Overnight Oats! My kiddos are already back in school and they’re obsessed with this dessert for breakfast morning meal.
And I’m over here still getting back to school anxiety even though I won’t be going back to work in the education field this year. Yep, that’s right. It’s all about the blog baby! What really gets my palms sweaty is when I walk into Target and see back to school signs everywhere. NOOOOOOOO. But then I remember, all of the stress of my old job is behind me and I get to focus on what I’m truly passionate about – food. 😊

The base of this recipe is super simple and only takes like 5 minutes to mix together.
- Oats
- Applesauce
- Yogurt
- Cinnamon
- Almond or cashew milk
The final step is completely optional and takes just a tad bit more time, but it’s so worth it. I am all about mixing hot and cold foods. So to make this recipe even more spectacular, I caramelized some apple pieces with a little cinnamon and coconut sugar. Tha best.
If you don’t have time for that, just simply add chopped apple to your oats. And if you prefer them softened (like I do) pop them in the microwave for a minute or so. Or you could even sauté the apples the night before. Store them in a container and then reheat it in the morning, so that you get that hot/cold mixture deliciousness.
I love, love, love this oatmeal recipe. It’s thick, creamy, cozy and full of apple-cinnamon flavor. Just one serving is so satisfying and always keeps me full ’til lunch with plenty of fiber and protein. You could even add a dollop of almond butter or other nut butter for extra staying power, if you wish.
I enjoy my oatmeal on weekday mornings since it’s become part of my daily routine and is perfect for grab-n-go. But it would also be a lovely breakfast to make for guests or lazy weekend mornings – the best kind of mornings in the history of weekends.
Sub out other seasonal fruits for a change! I love blueberry, cherry and carrot cake versions as well.

Apple Pie Overnight Oats
Ingredients
For the Overnight Oats
- 1 cup rolled oats
- 1 cup yogurt*
- 1/2 cup milk**
- 1/4 cup applesauce
- 1/2 teaspoon ground cinnamon or apple pie seasoning
- 1/2 teaspoon vanilla or almond extract
For the Caramelized Apple Topping
- 1 apple
- 1/2 tablespoon coconut oil or a fair amount of cooking spray
- 1 1/2 teaspoons coconut sugar
- 1/2 teaspoon cinnamon
- Optional: stevia or other sweetener
Instructions
- Throw all overnight oats ingredients into a mason jar or other container, stir to combine and refrigerate overnight or at least 2 hours.
For the Caramelized Apple Topping
- Chop apple into bite-sized pieces. Heat 1/2 tablespoon coconut oil in a saucepan or small skillet and add the apple, coconut sugar and cinnamon. Sauté on medium/high heat for about 5 minutes or until apples are golden brown and begin to soften.
- Top overnight oats with the apple topping, additional splash of milk (if desired) and enjoy!
