If you’re like me, you’re pretty excited to welcome in the spring season. And I can’t think of a better way to celebrate warmer weather, flowers blooming and birds singing than with a refreshing Fruit Salsa. Since you can’t make a meal out of Fruit Salsa alone, we’re serving it up with quick and Easy Blackened cod.

This recipe works well with any flaky white fish, but cod is my favorite. I always try to find wild-caught cod and I usually buy in bulk from Costco. Cod is a great figure-friendly food- low in calories, high in protein and tasty too!

Besides making fish tacos, this is my favorite way to serve white fish. I absolutely love the vibrant colors and Cod topped with Fruit Salsa makes for a light, refreshing, flavorful meal. Yet, this meal will keep you full and satiated thanks to the cod, packed with high quality proteins and omega-3 oils.

Blackened Cod with Fruit Salsa

Blackened Cod topped with Fruit Salsa is an easy, light, flavorful meal bursting with fresh flavor!

Ingredients

For blackened cod:

  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon oregano
  • 1/8 teaspoon cayenne pepper
  • 1 lime, juiced
  • 4 cod fillets
  • 3 cloves garlic, minced

For fruit salsa:

  • 1 cup finely chopped pineapple
  • 1/2 cup finely diced strawberries
  • 1/2 cup finely chopped red bell pepper
  • ½ cup finely chopped red onion
  • ¼ cup chopped fresh cilantro
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey

Instructions 

  • Combine spices in a large baggie. Place cod inside baggie with spices, seal baggie and toss so that seasonings completely cover fish. Set aside.
  • Heat a large cast iron skillet to medium high heat with about 1/2 teaspoon olive oil. Add minced garlic and saute for about 20 seconds, then add in your cod fillets. Let fish sear for 2-3 minutes, then flip and cook another 2 minutes. When fish is completely cooked it will be white and flaky throughout. Remove to plate and repeat with additional fish fillets, if needed. Squeeze lime juice over fish.
  • While fish is cooking, prepare fruit salsa ingredients. Combine all fruits and stir in apple cider vinegar and honey. Once fish has cooked, top each fillet with fruit salsa.

Notes

It may be necessary to cook fish in two batches, depending on the size of your skillet.
Not only is this recipe delicious served on its own, it also works well as a fish taco filling. If making fish tacos, be sure to make my avocado crema sauce. It's soooo good!
