Last week was really crappy. Nothing serious… just work stuff. So, Saturday morning when I was trying to decide what to have for breakfast, I knew it had to be something sweet and over-the-top delicious. These three ingredient pancakes sure fit the bill. At least something good came out of a few terrible days.

These little gems are pretty perfect. The oats add tons of satisfying texture, the banana works as a sweetener and holds everything together and then the egg whites fuel your body with lean protein. Even though the main three ingredients will work wonderfully; you will enjoy your pancakes so much more with a dash of cinnamon and stevia.

Three Ingredient Oat Pancakes for One

Three Ingredient Oat Pancakes for One- the perfect quick, easy, satisfying breakfast for one that's super scrumptious too!

Ingredients

  • 1/2 very ripe banana, mashed
  • 1/3 cup quick oats or old-fashioned oats pulsed a few times in a food processor
  • 1/3 cup egg whites*
  • Optional for tastier pancakes: 1/2 teaspoon cinnamon and 1 packet stevia
  • Optional for serving: maple syrup and fresh fruit

Instructions 

  • Combine mashed banana with oats and egg whites. Add cinnamon and stevia, if desired. Let mixture sit for about 3-5 minutes. Heat a non-stick large or small skillet or griddle.** Spray with cooking spray as needed.
  • Spoon or pour batter onto skillet or griddle. Allow pancakes to cook about 5-8 minutes on the first side and then 3-5 minutes on the second side and until both sides are golden brown.
  • Remove pancakes to plate and serve with maple syrup and fresh fruit, if desired. Enjoy!

Notes

*I use liquid egg whites from a carton.
**I use an 1/8 cup to spoon batter onto griddle to make 6 very small pancakes. Alternatively, use a small skillet to pour all batter into and make one very large pancake.
