Happy Black Friday! I hope everyone had just as wonderful of a Turkey Day as I did and now you’re gearing up for game season. I have to admit, I’m not much of a football fan, but I never miss an excuse to eat all the snacks! I do try to ditch the chips and keep things somewhat figure-friendly without sacrificing flavor. Crispy sweet potato fries are pretty hard to come by, but with the crunchy Blue Diamond almonds and the fancy way I cooked these suckers, we’ve got sweet potato fries with the perfect crispy crunch! I layered my wire cooling rack over a large baking sheet that had been lined with foil and evenly spread fries over the rack, giving each one plenty of room to cook through.

Served alongside the rest of your typical game-day snacks these almond crusted sweet potato fries are sure to go quick, so if you’re feeding a crowd, you may need a double batch. They’re slightly addicting! Brad, Landen and I could not quit! And that creamy sriracha sauce- I could put that stuff on everything. Brad often uses it as a spread for burgers and sandwiches. I like using it as a dipping sauce for raw veggies too.

Blue Diamond has so many fun almond flavors, feel free to get creative. I used Brad’s favorite, the Wasabi & Soy Sauce almonds. The wasabi soy sauce taste wasn’t too strong, but gave these fries a nice seasoning. If you choose to use a plain almond or unsalted almond, season accordingly. If you like a kick of spice, add a pinch of cayenne pepper to the flour or panko crumbs and if you’re using raw almonds, I would definitely add about a teaspoon of salt to the flour or panko crumbs.

Almond Crusted Sweet Potato Fries with Creamy Sriracha Sauce

Almond Crusted Sweet Potato Fries dipped in Creamy Sriracha Sauce- the absolute perfect game-day appetizer for the health conscious!

Ingredients

For the fries:

  • 1 large sweet potato
  • ½ cup Wasabi & Soy Sauce Blue Diamond Almonds
  • ½ cup panko breadcrumbs
  • ¼ cup flour, I use whole wheat
  • 1 egg
  • 1 egg white
  • 1/4 teaspoon salt

For the creamy sriracha sauce:

  • cup fat free plain Greek yogurt
  • 3 tablespoons mayo or additional Greek yogurt
  • 1/2 teaspoons garlic salt
  • ½ teaspoon honey
  • Salt and pepper, to taste
  • 2 teaspoons sriracha sauce or more to taste

Instructions 

  • Preheat oven to 400 degrees F. Optional: peel the potato.
  • Peel potato (if preferred) and cut into matchsticks (about ¼ inch thick).
  • Add almonds to a food processor and pulse until they are very finely ground, but not yet of flour consistency (about 30 seconds).
  • Place almonds in a shallow bowl and add panko breadcrumbs and salt. Stir until well combined.
  • Place flour in a second shallow bowl.
  • Add the egg and egg white to a third shallow bowl and beat until well combined.
  • Dip the sweet potatoes in the flour, then the eggs, and last the almond mixture, making sure they are well coated on all sides.
  • For best results, place the potatoes on a wire rack that is placed on a baking sheet. Alternatively, sweet potatoes can be cooked directly on a baking sheet that has been sprayed with non-stick cooking spray. Bake for 20 minutes.
  • While sweet potatoes are cooking, stir together all ingredients for the creamy sriracha sauce in a small bowl.
  • Enjoy almond crusted sweet potato fries dipped in creamy sriracha sauce! They're also great dipped in ketchup or any other favorite sauce.
