Prune Power Balls are the perfect pre or post-workout or anytime snack- loaded with antioxidants, fiber and flavor! I’m committed to healthy snacking in 2015 and in an effort to keep my new year’s resolutions, I’ve created a simple, good-for-you, tasty snack ball recipe. We all know new year’s resolutions are easy to make, but can be really challenging to maintain.

When I set out to create these Prune Power Balls, I wanted a quick, small, healthy dessert or mid-afternoon snack. I thought about using my typical go-to dried fruit, dates, but I really wanted something different. I discovered that prunes have a lower GI than dates, and are therefore better for weightloss. And by adding nuts, the insulin spike from the natural sugar is decreased.

Why do prunes get such a bad wrap? People seem to associate them with the elderly and feeble. Really, prunes are adaptable, deeply flavored and perfect for healthy snacking. I used Sunsweet® prunes; which are soft, sweet and make for delicious Prune Power Balls!

Prune Power Balls

Prune Power Balls- loaded with antioxidants, fiber and flavor!

Ingredients

  • 1 1/2 cups prunes, 9 ounces
  • 1 cup cashew pieces (peanuts or other nut variety would also work), 4 3/4 ounces
  • sea salt, optional
  • 1/2 cup unsweetened shredded coconut

Instructions 

  • Grind nut or seed in a food processor until nut pieces are very fine, but not flour-like.
  • Add dried prunes and pulse until dough forms into a large ball. Taste and add sea salt, if desired, and pulse a few times again.
  • Shape dough into 18 balls. Dough will be sticky, it helps to have slightly damp hands while working with dough.
  • Place shredded coconut in a shallow bowl and roll prune balls in coconut to thoroughly cover ball.

Notes

Store in a covered container, in the fridge for a couple of weeks.
