While I could literally go on and on about these bars, I won’t. I’ll just tell you to make them ASAP. Breakfast has been glorious the past two days- I’ve been mashing up two of them with almond milk and then I heat it all up in the microwave for one minute. Oh my, if you love peanut butter and bananas as much as I do; this is a must make! My kiddos have loved them for afterschool snacks and I keep catching Brad stealing bites from the leftovers. 🙂

Chocolate Peanut Butter Banana Oatmeal Bars

Delicious, ooey gooey, peanut buttery banana flavor in easy one-bowl oatmeal bars!

Ingredients

For the bars:

  • 2 cups rolled oats, use gluten-free, if preferred
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsweetened vanilla almond milk, any milk will work
  • 1/2 cup peanut butter, I used all-natural crunchy PB from Trader Joe's
  • 1/4 cup honey, use maple syrup for a vegan option
  • 3 small ripe bananas, about 1 cup, mashed

For the chocolate drizzle (optional):

  • 2 tablespoons chocolate chips, I use Enjoy Life brand mini chips. They are vegan.
  • 1/2 teaspoon coconut oil

Instructions 

  • Preheat oven to 350 degrees F. Spray an 8 x 8 baking pan with an all-natural cooking spray and set aside.
  • Combine all bar ingredients in a medium bowl and pour into the prepared baking dish.
  • Bake for about 30 minutes and until toothpick comes out clean.
  • Allow bars to cool for about 20 minutes before cutting and serving.
  • If using chocolate drizzle- warm chocolate chip and coconut oil in a small microwaveable bowl for 20 second intervals, stirring each time. When chocolate is melted, use a spoon to drizzle over the tops of the bars. Enjoy!

Notes

Chocolate and PB are a classic combo. You could also melt peanut butter or peanut butter chips to drizzle on top for even more decadence.
