As I shared yesterday, it’s about to get crazy busy with the hustle and bustle of going back to school. With all of the after-school activities that my kids have; when we get home we all want dinner and we want it quick. I try to avoid fast food at all cost, so if I haven’t prepped a meal in advance, we need something quick and easy that can be thrown together in a matter of minutes.

15 minute meal ideas with MorningStar Farms

I recently tried the Mediterranean Chickpea Burger and Spicy Black Bean Veggie Burger from MorningStar Farms. Both products were so tasty and worked perfectly for creating simple flavorful meals, that my whole family enjoyed. Aside from using the veggie burgers to just make burgers; there are so many other delicious uses for these patties. They sure have added pizzazz to my salads and wraps. I’ve also been adding them to my “salad-jar” lunches… yes, I’m hooked!

Both the Mediterranean Chickpea Wrap and the Southwestern Black Bean Salad were pretty much the result of throwing some of my favorite ingredients together. I don’t measure anything… I just use the amount of ingredients that I prefer. Below are a couple of rough recipes to follow- feel free to add and substitute your favorite ingredients.

MorningStar Farms Mediterranean Chickpea Wrap- Quick, easy and flavorful meal idea!

Mediterranean Chickpea Wrap

1 tortilla or wrap
1 MorningStar Farms Mediterranean Chickpea Burger, cooked and diced
1 small tomato or a couple of cherry tomatoes, diced
1/4 a cucumber, diced
mixed greens
hummus (store bought or homemade)

Heat tortilla in a small skillet for a couple of minutes on each side. Cook burger in a small skillet for about 3-5 minutes on each side and until heated through. Spread hummus on tortilla and add diced burger and veggies. Enjoy!

Southwestern Black Bean Salad- Quick, easy and flavorful meal idea!

Ingredients: (Just use the desired amount)
black beans
mixed greens
bell pepper (I used yellow)
MorningStar Farms Spicy Black Bean Veggie Burger
Cilantro Lime Dressing
feta cheese

Cook veggie burger in a small skillet over medium heat for about 3-5 minutes on each side. Meanwhile, prepare all other salad ingredients. Once burger is cooked, chop it up and toss it with all other salad ingredients.
