Are you doing your best to lighten things up in between holidays? I don’t know about you, but I’ve been bombarded by one after another holiday gathering. So, when I’m not attending some sort of festivity, I’m doing my best to stick with figure-friendly but still delicious eats. Wow! Great list. I made the remake of Panera’s which was excellent and so easy. I used a pear Gorgonzola dressing which is in most stores. Thanks for the tip on the Bare Apple chips – that made it sooo easy when I got to that aisle.
I also made the quinoa cranberry butternut squash salad. I mixed this with arugula and feta from your “optional” recommendations and would never make it without these additions. This was perfect and a I’m sure a perfect make ahead salad for an event!

The Fuji Apple salad looks amazing but I despise any form of vinegar for the dressing. Any alternative suggestions? I’m a super-picky eater, so even willing to try the salad is a walk on the wild side for me.
The Panera Bread vinaigrette that’s recommend is a thicker vinaigrette and it doesn’t taste vinegar-y to me. It’s sweet. But you could just use olive oil with salt and pepper, maybe a squeeze of lemon too. Or simply use any favorite lighter flavored dressing that would pair well with the apple. Hope you enjoy!
