This recipe for a yummy Cauli-Berry Smoothie Bowl utilizes the texture of cauliflower florets to sneak veggies into a berry-laced smoothie bowl. Smoothies can be so good and refreshing, but smoothies with cauliflower are GREATness! Cauliflower adds such a lovely creaminess that I enjoy immensely. Whole bowl devoured in record time. And I’ve already made it two more times since!

If you enjoy browsing foodie Instagram feeds, you’re well aware that smoothie bowls are one of the biggest breakfast trends out there—and for good reason. Whether packed with leafy greens, berries, tropical fruit or even creamy avocado, these super-bowls can be incredibly gorgeous, satisfying, nutrient-rich, and most importantly, wonderfully scrumptious. Like eating ice cream for breakfast!

Have you tried one? I am obsessed. You basically make a thick smoothie, pour it into a bowl, add a ton of toppings, and eat it with a spoon. Yes, you eat it, not drink it, so it totally counts as a meal!

This recipe only requires 4 ingredients, 1 blender and not even 5 minutes. Oh, yeah!

Simply add a small amount of non-dairy milk of choice – I like unsweetened vanilla almond or cashew milk. Start with about 1/4 cup, just to get things moving. Then add frozen banana slices, frozen raspberries (or any berry) and raw frozen cauliflower florets or raw frozen riced cauliflower (trust me, guys) to a blender and blend on low (this is key).

Add more liquid as needed, stopping every few seconds to scrape down the sides of the blender until you have a lovely ice cream consistency. Yep, a smoothie bowl is pretty much glorified ice cream. Exactly why I can’t get enough.

To make an extra thick, ice cream consistency smoothie that’s best eaten with a spoon; be careful not to over do it on the liquid. The result will be a thicker, richer and creamier mixture that’s absolutely delicious!

Plus, skipping the glass lets you go wild with creative, tasty additions like sliced almonds, chia seeds, shredded coconut, granola and other fun toppings. With this Cauli-Berry Smoothie Bowl, get ready to feel like you’re digging into a bowl of fro-yo at the breakfast table.

Cauli-Berry Smoothie Bowl

My go-to smoothie bowl with just 4 ingredients! So delicious, veggie-filled and super easy!

Ingredients

  • 1/2 - 3/4 cup unsweetened vanilla almond milk, or other dairy-free milk
  • 1 large very ripe frozen sliced banana
  • 1 cup frozen raspberries, any berry will work
  • 1 cup raw frozen cauliflower florets, or riced cauliflower
  • Optional: 1 scoop vanilla protein powder, non-dairy & gluten-free, as needed
  • Toppings as desired

Instructions 

  • Add about 1/4 cup milk and then frozen banana, raspberries and cauliflower to a blender and blend on low until fruit is broken into small bits.
  • Add about 1/2 cup more milk and protein powder, if using; blend on low again, scraping down sides as needed, until the mixture reaches a soft serve consistency. It may be necessary to add a bit more milk to get the consistency right.
  • Scoop into 1-2 serving bowls and top with desired toppings. Enjoy!

*Nutritional information calculated based on the measurements of my typical smoothie bowl (without toppings). This includes: slightly less than 3/4 cup Silk Unsweetened Vanilla AlmondMilk, 1 cup frozen organic raspberries, 1 large banana equal to 144 grams and 1 cup frozen riced cauliflower.
*Feel free to use ingredient measurements as a guide. Use more or less what I use and feel free to add in other favorite ingredients.
