I don’t know about you, but I’m always up for a delicious, filling meal that you don’t have to feel guilty about and can be whipped up in about 5 minutes. There’s several ways you can go about making your hummus chicken salad. The easiest way is to use shredded rotisserie or leftover cooked chicken and store-bought hummus.

Buuuuuuuut… making your own hummus is so much tastier and won’t take too much extra time. I have quite a few hummus recipes on the blog that would be fabulous mixed up salad-style. Keep things interesting and try them all! The beet hummus sure would make for a pretty chicken salad and if you like your chicken salad with a little extra kick, use white bean chipotle hummus. My personal favorite hummus recipe is cilantro jalapeno hummus, a Trader Joe’s copycat recipe, but actually waaaaay tastier. I make this hummus at least every other week to have on-hand for healthy snacking. When I needed a healthy lunch in a hurry, I decided to try mixing some shredded rotisserie chicken with my yummy hummus. Very good decision!!

I enjoyed my super simple hummus chicken salad in a wrap, but it would also work well served on crackers, on top of a bed of greens or on sandwich bread. And it’s actually pretty darn good just eaten straight out of the bowl, without anything else. Just don’t dip any chips in it because that’s downright addicting!

Super Simple Hummus Chicken Salad

Super Simple Hummus Chicken Salad- such an easy, light and healthy lunch idea, perfect for on-the-go lunches!

Ingredients

  • 1 cup cooked chicken, shredded or cubed (I use the meat from a rotisserie chicken)
  • 1/2 cup hummus, use your favorite variety

Instructions 

  • Combine shredded chicken and hummus in a large bowl.
  • Mix well until all chicken is coated.

Notes

Feel free to use as much or as little hummus and chicken as you like to get your preferred ratio of each.
Serve in a wrap, on crackers, on sandwich bread, on a salad or even use as a dip.
