These fluffy Skinny Gingerbread Pancakes are bursting with warm holiday spices. Serve them up, along with Starbucks coffee, Christmas morning or any morning for the most perfect seasonal treat!
Sweetened with molasses and flavored with gingerbread spices- gingerbread pancakes are a Christmas morning tradition at the Lee Household, but I could honestly eat them year round. They appear a bit thicker than the typical pancake, but don’t worry, these are light and tender.
Another Christmas morning tradition, involves cup after cup of Starbucks Holiday Blend. Honestly, if I had my way we would forgo the ham and turkey and eat breakfast food and drink Starbucks all day long! Pancakes, waffles, cinnamon rolls, muffins, frittata… sounds pretty fabulous. For Christmas morning get-togethers, I always have a few varieties of Starbucks k-cups and Starbucks hot cocoa k-cups on hand. I prefer to use k-cups for parties and such- that way everyone gets to decide what flavor coffee or hot cocoa they want.
My Skinny Gingerbread Pancakes are so easy and quick, too! Combine all of the ingredients in one bowl, fire up the griddle and you’ll have 14 hot cakes ready-to-serve in no time at all. While waiting on breakfast, your family can get all warm and toasty with a mug of their favorite Starbucks coffee.
I remember, as a child, it was the longest most agonizing wait to get through Christmas breakfast and on to the exciting present unwrapping event. The anticipation was almost enough to make you burst!
As an adult, I realize how quickly the magical holiday season comes and goes and I totally get the long drawn out breakfasts and enjoy savoring every moment, just like my parents and grandparents always did.
As the holidays pass by in a flash, it’s the traditions that keep our memories alive throughout the year and the anticipation building.

We use favorite family recipes to bake up homemade Christmas cookies and other holiday desserts.
In our soft flannel pjs, we eat gingerbread pancakes, sip on Starbucks comforting hot coffee and cocoa, while the kiddos peek to see what Santa left in their stockings. I heart Christmas morning!
- 2 cups whole wheat flour*
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- 2 teaspoons ginger
- 1 teaspoon nutmeg
- ½ teaspoon cloves
- 2 tablespoons (unsulphured) molasses
- 2 large eggs
- 2 cups unsweetened vanilla almond milk or other milk product
- 2 teaspoons pure vanilla extract
- Heat a large skillet over medium heat or a griddle.
- Mix all dry ingredients in a large mixing bowl. Add all wet ingredients and mix well to combine, until there aren't any dry spots; don't over mix.
- Lightly spray skillet or griddle with a natural cooking spray and spoon about ¼ cup of pancake batter onto the skillet or griddle.
- When bubbles in the pancake settle and the edges begin to darken, flip the pancakes. Repeat until all of the batter has been used.
Starbucks coffee products can be conveniently purchased at most grocery stores. I picked up my Starbucks coffee while shopping at Kroger, this past weekend. Most varieties of Starbucks coffee are located in a special area near other coffee brands. I did notice that the Starbucks holiday blends were located at the end of an aisle.
