Making your own healthy almond butter that tastes just like a cinnamon-sweet snickerdoodle cookie is easier than you think and much more nutritious. Just try to keep your fingers out of the almond butter jar!

Snickerdoodles are one of my very favorite cookie variety. I just love the cinnamon sugar coated puffy butter cookie! Enjoying a spoonful of this almond butter is seriously like munching on snickerdoodle cookie dough- a little addicting, to say the least!

I absolutely love making my own nut butters because I can control what ingredients I use. Many store-bought brands of nut butter contain unnecessary oils and sugars. It’s super easy- you can walk away and let the food processor do its job. I have a this Cuisinart and it works like a dream.

Start with adding your nuts to the food processor. Turn the food processor on high and let it go to work on the almonds, grinding them into a flour. It will be super loud, especially when you first turn on the food processor, but don’t worry, your food processor will not explode. 🙂 Eventually your almond flour will begin to clump. Let the processor continue running until desired consistency is achieved. You may have to stop the food processor intermittently to scrape down sides several times with a rubber spatula. Be patient- I promise, the almonds will get creamy. If you prefer your almond butter extra drippy, just continue processing a little longer. Making almond butter in my food processor takes about 15-20 minutes.

Once the almond butter is creamy, add whatever additional ingredients you like. For snickerdoodle almond butter; add 1 tablespoon of cinnamon and vanilla, plus a teaspoon of salt. Turn the processor on again to fully incorporate the seasonings, then stop and taste. Add more seasonings, if desired. Now dip in a dried fig- I swear it’s like heaven on Earth!!! My favorite snack!

Snickerdoodle Almond Butter

The taste of snickerdoodle cookies in an easy to make healthy almond butter!

Ingredients

  • 3 cups raw almonds, I purchase raw almonds in bulk from Costco
  • 1 tablespoon pure vanilla extract
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt, plus more to taste

Instructions 

  • Add raw almonds to food processor and allow them to process for 15-20 minutes and until desired consistency of almond butter is achieved. You may need to stop the processor a few times to scrape down sides (to fully incorporate almonds) with a rubber spatula.
  • Add vanilla, cinnamon and salt. Continue to process until all ingredients are fully incorporated and almond butter is smooth.
  • Transfer almond butter to a jar with a lid.
  • Now just try to keep your fingers out of the jar!!

Notes

Yields 1 3/4 cups of almond butter. Store in the fridge.
