This fruity strawberry salsa is a healthy tasty appetizer that is perfect served with a cold cocktail. Can you say summer girl’s night by the pool? 🙂 The salsa is a breeze to throw together and adds color to whatever you serve it with. Brad and I enjoyed it with the grilled chicken that you see pictured, for dinner one night. We also ate plenty of the salsa with pita chips, and the leftovers were fabulous in my chicken tacos the next night.

Speaking of the grilled chicken that you see pictured; it was so flavorful and delicious. And not just from the fruity salsa- we rubbed on Stubb’s chicken rub, to season the chicken about 30 minutes before tossing it onto the grill. It was a quick, easy and healthy way to give the chicken lots of flavor. We’re also loving Stubb’s Green Chile Marinade for marinating chicken to make into chicken tacos. Both the chicken rub and marinade are made with all-natural ingredients, contain no high fructose corn syrup or additives of any kind, and are certified gluten-free.

I will definitely be recreating the whole grilled chicken/fruit salsa combo! I can’t wait to experiment with some different fruit combos. Pineapple and peaches, blueberry and black bean, mango and kiwi… oh, the possibilities! Fruit salsas are super easy, affordable, adaptable and customizable. They’re one of the best foods to take to a party and can be made in a pinch. So simple to whip up and so, so crowd-pleasing!

Strawberry Salsa and Cinnamon Pita Chips

Fresh and fruity! You'll want to eat this healthy appetizer all summer long and bring it to a gathering and be the star of the show. 😉

Ingredients

For the salsa:

  • 1 cup diced strawberries
  • 1 cup diced tomatoes, seeds removed (about 2 small tomatoes)
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 minced jalapeno, seeds and ribs removed
  • 1 avocado, peeled, pitted and chopped
  • 1 tablespoon lime juice, about 1 lime
  • 2 teaspoons honey or agave
  • salt and pepper to taste

For the cinnamon pita chips:

  • 3-4 pitas or tortillas
  • coconut oil spray, or other cooking spray a couple of tablespoons of coconut oil works too
  • 1 tablespoon granulated sugar or coconut sugar*
  • 1 1/2 teaspoons ground cinnamon*

Instructions 

For the salsa:

  • Combine all ingredients and serve chilled.

For the cinnamon pita chips:

  • Slice pitas into desired shape and size. A pizza slicer works well for cutting. Lay pita slices on a baking sheet, spray with coconut oil spray (or brush coconut oil on) and sprinkle desired amount of sugar and cinnamon on slices.
  • Bake at 400 degrees F. for about 5-10 minutes. Check frequently after about 5 minutes because these burn easily.

Notes

Measurements, particularly for the pita chips, are a rough guide. Feel free to use as much sugar or as little as you desire. Also, feel free to experiment with strawberry salsa ingredients. Add in favorites- mango sure would be tasty!
**in place of the cinnamon and sugar and mixed cinnamon/sugar grinder would work well
