Howdy, folks! It’s June…. yay! June means 4 more days of work and it’s summer vacation for me…. I think I can make it. 😉 May was a little chaotic in terms of blogging, due to my “real” job getting in the way. Somehow I still managed to post some delicious recipes and I’m sharing my favorites with you, today.
My VERY favorite for the month is a toss-up between the Light Vegetable Frittata, Quinoa Pancakes and Banana Blueberry Overnight Oats. I eat Banana Blueberry Overnight Oats for breakfast often, so I’ll go with that recipe as my #1 for the month.
Pancakes are always tops on my list, so we’ll go with the Quinoa Pancakes next! These pancakes are perfect for using up leftover quinoa, but are also delicious enough to cook a batch of quinoa, especially for these.
Have you ever made a frittata? If you’re an egg lover, like myself, I strongly suggest making this Light Vegetable Frittata. You can change out the veggies with what you like best or what you have on hand.
I sure was loving quinoa for breakfast foods! Not only did we have quinoa pancakes, but I also baked up some Chocolate Chip Quinoa Oatmeal Muffins. These are the perfect make-ahead breakfast and also a great use of leftover quinoa.
While we’re on the subject of muffins; I might as well share my Double Chocolate Whole Wheat Muffins with you. You guys know how much I love my muffins! Also included in this post are tips for baking the perfect muffin.
Okay…. I think it’s time we move on from breakfast recipes. How about a smoothie? Which, technically, could work for breakfast. Oh, how I love breakfast! I actually have to force myself to make dinner recipes for the blog. The figs in this Figgy Green Smoothie actually give it a cake batter taste and who doesn’t want a snack of cake batter?!?! 😉
I don’t think I posted a single dinner recipe all month, but I did post a couple of lunch recipes. I’m such a sucker for a tasty, but healthy chicken salad. This Greek Yogurt Chicken Salad is just that…. made with Greek yogurt, not that nasty ol’ mayo.
The Tuna Avocado Egg Salad was the other lunch recipe that I made. It’s protein-packed, quick, easy and delicious. I’d say the perfect lunch recipe! I mean avocado makes everything better, right?!?!
It wouldn’t be a complete blogging month without a sweet treat and these Healthier Lunch Lady Brownies really take the cake!
I also shared a post all about grains; Going with the Grain: A Complete Guide to Grains. This post includes information about different types of grains, ways to cook them and tips for how to cook them.
And that’s all of the excitement for May…. bring on June and all that comes with that lovely month. It’s definitely one of my favorites!
