Almond Flour Apple Pie (vegan and gluten-free)

Howdy, friends! Today, I’m giving you nonpumpkin noloving pecan pie people something to sweeten up your Thanksgiving Day celebration. And if you’re gluten-free or vegan eating…. no worries, you’re totally covered with this Almond Flour Apple Pie! Originally, this recipe was going to be called an “Almond Flour Apple Crisp“, but since we have no crispiness I’ve had to revise the title a bit.

Vegan and Gluten-Free Apple Pie

I really would have liked for this crust to come out somewhat crispy and even a little flakiness would have been great. I think it was the almond flour that left things more creamy than crispy. I thought about waiting to share this recipe until I experimented a little and came up with a crispy crust, but this apple pie was just too delicious not to share. In fact, my husband and I pretty much polished off the entire pie in one day….oops!

Almond Four Apple Pie (vegan and gluten-free)
Serves: serves 6-8
A vegan gluten-free apple crisp that is perfect for the Thanksgiving table!
  • 2 apples, peeled and diced (I used Granny Smith apples)
  • ¼ cup water
  • ¼ cup maple syrup or coconut sugar (honey works too, if eating vegan is not a necessity)
  • 2 teaspoon cinnamon
  • ¾ cups almond meal or flour (whole wheat pastry flour works too, if eating gluten-free is not a necessity)
  • ½ cup chickpeas, mashed
  • ¼ cup coconut sugar or maple syrup (honey would work too, but is not vegan)
  • 1 cup unsweetened vanilla almond milk (or other non-dairy milk)
  • 2 tablespoons ground flax
  • 2 teaspoons vanilla
  1. Preheat the oven to 375 degrees F and spray a pie plate with a natural cooking spray.
  2. Peel, core and dice apples.
  3. In a medium to large sauce pan over medium heat; add diced apples, water, maple syrup or sugar and cinnamon. Simmer and stir apples frequently for 8 - 10 minutes and until apples are softened.
  4. In a medium mixing bowl, combine almond flour, mashed chickpeas, maple syrup or sugar, almond milk, flax and vanilla.
  5. Pour apple mixture into pie plate.
  6. Pour the almond flour mixture over the apple mixture.
  7. Bake for 35 - 40 minutes and until the top is crisp and lightly browned.
  8. Serve with a scoop of coconut cream, ice cream or nothing at all. This crisp is so good, a topping is really not needed.

    Thank you so much for this recipe. Question, have you ever attempted to use 1/2 and 1/2 of the required flour above between almond meal and whole wheat flour? Or any type of flour for that matter. I am a big oats flour fan so I was wondering if you had experimented.

      I haven’t experimented with the flour, but I think that this recipe would work great with 1/2 almond and 1/2 another type of flour. Both oat and whole wheat would probably work great. I wouldn’t use coconut, though because it would be too drying. Good luck! Let me know if you use another type of flour and how it works and I will update the recipe, if it works for you. 😉
