A What I Ate Wednesday Full of Veggies!

Hi, y’all!! Yesterday was a great day of eats and it was loaded with veggies…. even better! I’m linking up with new momma, Jenn from Peas and Crayons to bring you my eats from Tuesday. Head on over to her blog for more food inspiration.

Even my morning coffee included a veggie! I made Lisa’s dairy-free pumpkin spice coffee creamer and it is delicious! Love my new Twin Cities mug!


For breakfast, I’m pretty much sticking with my green smoothies that I’ve become accustomed to from the being on the cleanse {more to come on that in a couple of days}. You just can’t deny how good you feel when you load up on veggies first thing in the morning and green smoothies taste so good. My smoothie of the day included a couple of handfuls of spinach, celery, cucumber, banana, mango and coconut milk.


After I had been at work for awhile, I snacked on some baby carrots before lunchtime. Nothing new with the snacks of the day! 😉


Lunch was so, unexpectedly, wonderful! I didn’t expect much from Trader Joe’s canned split pea soup {and I know it looks like baby food}, but it was so tasty. I also roasted up a Delicata squash to bring with me to work. I may have roasted it just a little too long because it was more like mashed Delicata, but still delicious with a sprinkle of salt and cinnamon. After I posted the picture of Delicata at Trader Joe’s, a few people asked what it tasted like. It had been so long since I had eaten it that I really couldn’t remember; I just knew that I loved it. Well, it’s sweeter than kabocha and this may sound strange, but it also seems smoother and easier to eat. It’s rich and creamy… almost like a sweet potato. Definitely a must try!


While I waited in line to pick Landen up from school, I had my normal afternoon apple snack.


The apple didn’t completely do the trick, so then I had some raw almonds….. thanks to my HLS swag from Blue Diamond!


Tuesday evening is our busy night with lots of kids’ activities. After school, I dropped Madelyn off at horse riding lessons and Landen and I headed to Starbucks to kill some time before gymnastics started. I had the iced coffee with three pumps of sugar-free vanilla and I brought my own coconut milk.


After running Landen to gymnastics, I came back to Starbucks to catch up on some blogging and enjoy a salad that I brought from home. My salad included mixed greens, avocado, beets, mushrooms, zucchini, tomatoes, Mary’s Gone Cracker crumbs and TJ’s garlic olive oil. Unfortunately, all of the toppings are hiding. 😉


We got home pretty late from all of our evening activities, so I wasn’t really feeling any before bed treat. I was just ready to hit the hay.

    You and my mom are both on squash kicks lately. I got a text message after arriving at school this week with a whole bunch of squash pictures… Delicata being one of them. She said that it was sweeter too, but much more seedy than an acorn so it didn’t yield as much squash as she expected. I’m hoping the grocery store has a few when I get back!

    I haven’t had delicata squash since last winter so I can’t totally remember what it tastes like, but I remember I liked it! I love all winter squash.

    I’m pretty simple when it comes to my green smoothies: banana, almond milk or milk, and spinach or kale is my base and then I sometimes add flaxseed and raw cacao powder. I need to start experimenting with more different ingredients in mine!

    Can’t wait to hear more about your thoughts on the cleanse! It sounds like it’s a really good one – with no really heavy restrictions which I’m all for.
    I love delicata squash! For some reason I can find kabocha year round where I live, but delicata is more like a once per month thing! Weird how that happens…now I have a craving for it.

    I’m inspired to make my first green smoothie in months today :) I usually keep it simple with banana, almond milk, spinach, and greek yogurt, but I may add some unsweetened cocoa powder to satisfy the chocolate craving that has been haunting me!

    Actually, I’ve never had Delicata squash and am not even sure I’ve seen it in stores so far. But if you like it that much I might have to keep my eyes peeled for it, I guess.
    As usual I fully approve of you bringing your own food into Starbucks :). That might have to do with just finding out their extortionate price for Pumpkin Spices Lattees over here …

    I’ll have to try some of the Trader Joe’s soups…I’m always wary of canned soup like that but it is convenient. Looks like a delicious day of eats :)
