My very favorite recipe from the month, might just be this Chopped Southwestern Tuna Salad. It was so delicious and if you’re not a tuna fan just sub in chicken or for a vegetarian option, chickpeas.
Another lunch/dinner meal that was also wonderful, was the Curried Carrot Soup that I posted last week.
Last week was a pretty great week! I also posted Chocolate Chip Pumpkin Bread with directions to make it into muffins or a loaf.
Also last week, a really tasty and very simple recipe for Chocolate Almond Butter Spread. If you love Nutella, but hate all of the added sugar, give this spread a try!
