Random Friday Stuff

Happy Friday, friends! Let’s get right to all of the randomness swimming around in my head!

You know that I participate in virtual book clubs on the blog, but I’m actually part of a real book club too. Last night, it was my turn to host for the year. I spent the entire day cleaning my house and prepping the food. It sure was nice waking up to a super clean house this morning! Anyway, we read the book Left Neglected, by Lisa Genova {my selection}. After reading this book, I don’t even have the energy to write-up a full review of the book. It started out really good, but went down hill fast. The main character, Sarah, was in a car accident at the beginning of the book and suffered from Left Neglect. The rest of the book focused on Sarah’s therapy and recovery; which got really boring.

All of my book club friends pretty much agreed, this book was a stinker, but the food was good. I served my homemade garden salsa, Cilantro Jalapeno Hummus and Trader Joe’s guacamole for an appetizer {good stuff}. The hummus was a major favorite!


I also baked sweet potato chips….I cut thin slices of one sweet potato, brushed a little coconut oil on and sprinkled slices with sea salt. I baked them at 400 for about 15-20 mins. For our main meal, I made a big Mexican style salad and served up these Avocado Chicken Enchiladas. We also had Key Lime Pie for dessert {recipe coming soon}. Everything was delicious, but after eating lots of dairy and having gluten for the first time since the Conscious Cleanse; my stomach’s feeling pretty wonky this morning. Green Smoothie coming up!


Madelyn and I went to Panera Bread for lunch, on Wednesday, after running some errands. They’ve brought back the Strawberry Poppyseed & Chicken Salad and it is super delicious!


I know that I mentioned my love for Trader Joe’s California White Nectarines the other day, seriously, if you live near a Trader Joe’s go immediately and buy these nectarines. They are so juicy sweet yummilicious!!!


On the agenda for later today is a horse competition featuring my favorite little girl. Considering the heat index is supposed to be 108 today…..wish me luck…..


Speaking of the major heat wave hitting Texas….the best way to beat the heat is with froyo. Keep it super healthy and make your own. I have the three ingredient peanut butter froyo recipe on the blog, but the other night I changed it up some. Combine 1 banana, 1/2 cup frozen peaches {or any other frozen fruit}, and 1 tablespoon of coconut flour {optional} in a food processor. Add a favorite topping, such as almond butter and enjoy!

    Now that is some crazy heat… I don’t think I’ll complain about the slightly warm temperatures we’ve been having here anymore 😆 But I find that a really great way to cool off is to eat frozen fruit. I’ve really been loving grapes, blueberries, and mangoes lately. The only downside is that they’re super addicting and I find myself finishing off an entire bag without even noticing!

    I read Left Neglected as well, and definitely agree on your summary of the book. At first I thought it would be a really good book, but unfortunately that wasn’t the case.
    That strawberry and chicken salad looks SO good! Oh my gosh, if only Panera would get its butt over here.

    1) I wish we had Panera here (I don’t even know if Canada has them, but looks good).

    2) I’m afraid to do that froyo thing because no liquid – afraid i’ll break the processor (its a small one) or it’ll take forever…

    3) I read “Still Alice” by Lisa Genova and enjoyed it (not a typical read either)…I found it slow at first, but enjoyed it muchly afterward….never read “Left Neglected”…

    4) Do you plan workouts the week ahead? How do you know how many rest days you’ll take or what to do each day? (like you wouldn’t want to do all intense stuff day after day, etc..so how do you organize it?

    5) are you happy with current weight or not?

      I have heard that Still Alice is good…I may have to give it a try. I usually only plan my workout the day before and I’ll usually run, walk, do a Jillian Michaels video or a class at the YMCA. I’m happy with my current weight, but I could always be happier! 😉

    Also, I looked at the link for the “oatmeal pancake”” in the other post and it doesn’t link up…was wondering the original recipe (besides the changes you made)…
