Spring Break Edition of What I Ate Wednesday

Hi friends! It’s Wednesday….already? This is one week that I want to go super slllllooooowwwww. I’m telling you now, that come next Monday, I will not be ready to go back to work.

Today’s What I Ate Wednesday is a little different because I wasn’t at work. I did still manage to get my share of veggies!

6:45- Time for morning coffee. Yes, I’m that crazy girl that is still up at the crack of dawn for no reason; other than more time to enjoy the day! Since I usually wake up at 4:30, this was technically sleeping in.


7:45- Breakfast was a Banana Flax Paleo Pancake. Instead of 1/4 of a mashed banana and 1/4 cup of pumpkin puree; just use 1 whole very ripe mashed banana. I topped it with 1 tbsp almond butter, a drizzle of maple syrup and blueberries. Definitely, did not disappoint!


10:45- Lunch came early. I had a hair appointment for highlights and a cut; which was at 11:00 and about 45 mins away. I decided that if I didn’t bring lunch along with me, I would be starving by the time I was finished at the hair salon. I brought along one of my Breakfast Sweet Potatoes; topped with 1/4 cup Blueberry Chobani Greek yogurt, 1/4 cup Quinoa-Pumpkin Seed Granola and a serving of PB2. Yes, I ate this while driving (only at the red lights) to my appt….I like to live on the wild side. 😉


2:00- I got home and took full advantage of the beautiful weather. It has been what feels like forever since I’ve actually ran outside and it felt marvelous!


3:30- After my run, I had about 1/4 cup of Mango Chobani Greek yogurt with the last of my Quinoa-Pumpkin Seed Granola and an organic gala apple.


4:30- I got back in the kitchen to prep veggies for dinner, whip up some Snickerdoodle Cashew Butter and work on a new protein bite recipe. I snacked on some Plantain Chips from TJ’s and of course I had to taste the Cashew Butter to make sure it was suitable……it was. Those plantain chips sure are addicting!


6:30- For dinner, we finally tried Trader Joe’s salmon patties. Brad and I weren’t too impressed….I won’t be buying these again. Just FYI, the salmon patties from Costco (Trident brand) are way better. I served the salmon patties on top of a large salad with roasted veggies. In the bowl went; mixed greens, cherry tomatoes, roasted zucchini, squash, kabocha squash and bell pepper. For the dressing; I drizzled lemon juice and 1 tsp of olive oil over the top. Despite the salmon not being all that great, with everything mixed together, dinner ended up being pretty good.


8:15- Oh my goodness…my Keurig has went kaputt….major bummer. We had to get out the old Cuisinart. Luckily, it worked like a charm. Always good to have a “plan B” when it comes to coffee.


With my coffee, I had a Honey Nutbutter Protein Bite. Recipe to come soon…..they are delicious, but I’m still working on perfecting the recipe.

    Everything looks so yummy! I’ve heard of those banana pancakes before and I really need to try them. I think I’ve got some over ripe bananas in the kitchen now!
    Sorry about your Keurig……..I don’t think I could live without mine now! Hope you get one that’s up and running again soon! :)

    Honey Nutbutter Protein Bite…..only the name make me drool!!! Can’t wait for the recipe! Uh, I loooove Banana Pancakes. I make them a lot too and topped with berries it’s the perfect meal!!
    Girl, I always thought I am an early bird by getting up at 5:15…..but 4:30???? I am impressed!!! Happy WIAW Beauty!

    Haha! I’m definitely with you on needing a plan B when it comes to coffee. I go so far as to carry around little packets of my favorite Starbucks coffee when I’m traveling to make sure that I always have access to what I love. As for greens, I do my best to get a few small salads in throughout the day, but sometimes it doesn’t happen… Oops.

    Love the plantain chips from TJ’s! Can’t buy ’em too often because they’re gone before the end of the day. :)

    I like TJ”s Mahi Mahi burgers. They’re really good with salsa and veggie fixings for a quick meal.

      I know what you mean. Totally going to try the Mahi Mahi burgers….you’re the second one to recommend them.

      I will definitely be picking those up next time I’m at TJ’s. They had the Mahi Mahi, but I went for the Salmon.

    I totally agree!!!!!! Our coffee maker broke during a move and it was two days of torture before we bought a new one. We kept the old pot in case this one broke haha.

    I’ve been wanting to get the plantain chips from TJ’s…so next time I go I’ll have to pick some up!

    I bought the salmon last time I was there but I haven’t cooked them up yet!!
