Marvelous in my weekend, but not so much in my Monday!

I’m going to try to stay positive, but I’m really not all that happy about rushing off to work this morning. I’m going to make the most out of it and be thankful that I actually have a job to go to…..that I do enjoy {sometimes}. 😉

So, since today is not the most marvelous day I’ve ever had, let’s talk about this weekend……

It wasn’t all that exciting, but I did enjoy it. Just being at home getting things done that need to be done!

I spent much of the weekend doing more organizing and decluttering. Brad took all of the holiday decorations down; which was refreshing. I love when all of the decorations go up, but then after all of the celebration, it feels great to have everything back to normal. Anyone else feel the same way?

What a meal this was, that I made on Saturday for dinner! This picture is horrible because I was ready to chow down, rather than try to get a good picture. :)  The meal included one of my VERY favorite chicken recipes; prosciutto wrapped chicken with a lemon caper sauce, that can be found here from Kristin at I followed the recipe exactly, but doubled it.


The black-eyed pea mix is a version of hoppin’ john that can be found here from Jenna at I adapted the recipe slightly. I didn’t add the Serrano pepper in the relish because I didn’t have one, but I’ve used it before and if spicy things bother you, I suggest only using half of the pepper. Also, instead of using 1/4 cup of mayo, I used 1/4 cup of Chobani plain non-fat Greek yogurt….best adaptation. I never knew how wonderful tomatoes, a little salt and plain Greek yogurt would taste.

The other side dish is my own creation, Eggplant “Fries” and they did not disappoint. Even Madelyn ate these up and believe me that is saying something!! They were wonderful dipped in marinara sauce and would also be great dipped in ketchup, honey mustard, or whatever your favorite dipping sauce is.




Super Simple Eggplant “Fries”

  • 1 med eggplant
  • 2 egg whites
  • 1/2-3/4 cup 100% whole wheat bread crumbs, the amount will depend on the size of eggplant (almond meal or a combo of almond meal & flax would probably work too)
  • salt & seasoning to taste (I didn’t add any seasoning other than salt, but 1/2-1 tsp of oregano would be a wonderful addition.)


  • Cut eggplant in half and slice “fry” style. I tried to cut mine pretty slim and they were super crispy. The way I like them!
  • Put egg whites in one shallow bowl and bread crumbs in another shallow bowl.
  • Dip eggplant sticks in egg whites and then dredge them in bread crumbs. Press bread crumbs into the eggplant.
  • Place eggplant sticks on a baking sheet sprayed with a natural cooking spray and bake for 20 minutes at 415F.

Saturday night Madelyn and I did some reading. I love seeing my first grader reading a chapter book for fun!


The kids also had some hot cocoa with marshmallows and little gingerbread men. They got a really big kick out of this one, that Madelyn had dipped into the cocoa and marshmallows. Do you see what I see?!?!


Breakfast on Sunday was awesome! I adapted my Paleo Pumpkin Breakfast Scramble just a bit and added 2 tbsp of ground flax and used 4 egg whites instead of 3 to up my protein, but adding very few calories {290 calories without toppings}. This thing had staying power!! I topped it with the best coconut almond butter, pomegranate arils, a few banana slices and a small drizzle of pure maple syrup.

Sunday was a busy day full of errands, dance practice for Madelyn and a little Jason’s Deli.

You can say we’re stocked up on groceries now!

I’m always happy with a visit to Jason’s Deli! They have so many options on the salad bar and today they had something new….zucchini sticks.

Well that pretty much wraps up my weekend. I’m watching Biggest Loser as I type this up and I have to say- so far, so good. I fell off of the bandwagon for a few seasons, but Jillian’s back, so I’m back. 😉

    Oh man so many great eats! Next year my daughter starts kindergarten… Well I guess this year! Omg I feel old. Anyways, I can’t wait to see her read. I love to read. I’ll have to try your breakfast scramble :)

    Those eggplant fries sound amazing. I am a huge fan of eggplant and love seeing a new and creative way to fix it. Plus, I am a sucker for a simple recipe! 😉 One question, did you “salt” the eggplant before breading it? I was curious as to whether or not that would be necessary with this dish.

    I love the Biggest Loser and am so excited that it is back. It seems like it has been forever since the last season. The only problem…its regularly scheduled time is also the same time that the Bachelor (which premiers tonight) is on. Ugh, figures!! I guess I will be watching one of them online.

      I didn’t salt the eggplant before. I just grinded sea salt over the top of them before I put them into the oven. I’m in the same predicament with Biggest Loser and Bachelor. I’m watching Bachelor now on DVR a little delayed and since my husband is watching the game, I’ll have to catch Biggest Loser online. Too much good TV on tonight! 😉

    Like you, I’m not exactly thrilled about being back at work today. *sigh*

    I had my first experience at Jason’s Deli just about a month ago. I was very impressed!! The salad bar was fantastic–lots of choices for fresh veggies and toppings to make a killer lunch salad.

    I totally see what you see, haha! :-) All your food looks SO good. The breakfast scramble is a must try! And I am so with you on going back to work today, I felt awful but also thought I should be thankful. Just wasn’t that easy…. Something else off topic – I did your zucchini bread on the weekend and it turned out great! The only thing that happened – and happened before with other kind of breads with veggies – that after 2 days, when I broke it apart, it had kind of filaments… a bit like from a spidernent (so sorry, that is gross). I threw it away, as I thought it had gone bad. Did you experience something like this before? I hope your day will end good and that you have a better one tomorrow!

    wow that breakfast looks so good! i’m just starting to learn about the paleo diet, so i need yummy recipes to add to my repetoire 😉 marvelous monday involves a lot of planning/organizing for the week ahead – which is ok though, because i know i’ll feel a lot better once i get it done! :)

    Haha! I do see what you see. A delicious gingerbread man covered in marshmallows and hot chocolate, right? 😉

    I had to head back into work today too, and while it definitely took some getting used to, it’s also kind of nice to be able to get back into some sort of routine. The holiday craziness was a little much this year.

    I’m happy someone shares in my not so marvelous Monday mornings! I have been writing statements each day for what I am grateful for and yesterday was definitely “I am grateful I have a job that I have to wake up early for.” I think saying this enough times will make me truly feel grateful that I am forced to be a morning person.
