Marvelous Weekend, Marvelous Pumpkin Recipe and Marvelous in My Monday!

Welcome to another round of Marvelous in my Monday hosted by the beautiful Katie at one of my favorite blogs, healthydivaeats.com. My Monday is definitely Marvelous this week….I work today and a half day tomorrow and then lots of fun to look forward to the rest of the week.

 

A marvelous weekend was had with Landen’s first gymnastics meet and a Thanksgiving celebration. Here’s some highlights from the weekend…..

My marvelous Thanksgiving dinner. If I had to choose a last meal this would be it! That cranberry sauce is the one from TJ’s and I really liked it. The sweet potato dish is what I brought and I will post the recipe tomorrow. My mom did a fabulous job on everything, as usual!

A marvelous recipe today….my grandma’s famous Pumpkin Pie Dessert Squares {a true Thanksgiving tradition for my family}.

Definitely not healthy, but Marvelous FOR SURE!

Grandma's Pumpkin Pie Dessert Squares

The best pumpkin dessert EVER!
Ingredients
  • *For the crust*
  • 1 box of yellow cake mix, 1 cup reserved
  • 1 egg
  • ½ cup butter, melted
  • *For the filling*
  • 3 cups (1 lb. 14 ozs.) Libby's pumpkin pie mix (this is not the same as canned pumpkin puree)
  • 2 eggs
  • ⅔ cups milk (I used skim milk.)
  • *For the topping*
  • 1 cup reserved cake mix
  • ¼ cup sugar (I used brown sugar.)
  • 1 tsp cinnamon
  • ¼ cup butter, melted
Instructions
  1. Preheat oven to 350F and spray a 13 x 9 inch baking dish with non-stick cooking spray.
  2. Combine the ingredients for the crust and press into the bottom of the pan.
  3. Combine the ingredients for the filling and pour over the crust.
  4. Combine the ingredients for the topping and sprinkle over crust.
  5. Bake at 350F for 45 to 50 mins.
  6. Allow squares to cool for about 20 minutes and then store in the fridge (at least 3-4 hours) before serving.
  7. Bars will be tasty at room temperature, but are best served COLD with cool whip.

 

If you’re not worried about splurging a little this Thanksgiving; these are a MUST make!

    Those pumpkin bars sound amazing! No plans for splurging or being good on Thanksgiving yet but probably just going to go with what I feel like! It’s usually hard for me to splurge too much because a lot of the typical “splurge” foods will have gluten. I might just have to bring my own Paleo dessert :)

    It looks like you had a fabulous weekend! That puppy is adorable! :)

    Those pumpkin bars look so delicious. I will definitely be splurging this Thanksgiving, though it will be different this year since I am now vegetarian and cannot partake in eating all of the dishes. But don’t worry, I’ll be JUST FINE! 😉

    I am looking forward to trying pumpkin pie again for the first time in years. I never liked it before, but since adapting a healthier diet, my taste buds have majorly changed. I have a feeling I’m going to like it this time!

    It does look like you had a great weekend. I loved watching gymnastics in the Summer Olympics, and now you have your own little Olympian on your hands! :) And that puppy dog is adorable. Love the name.

    That last meal would be pretty good. That cranberry sauce looks amazing. I think I’m going to need to make a homemade version!

    I’m going to be super good for Thanksgiving, mainly because I’m allergic to everything at the dinner table. Ha. I’ll be bringing my own food in tupperware. Probably some chicken, veggies, fruit, etc.

    Ohhh those pumpkin pie squares look delicious!! I might have to make those. :)

    I love seeing recipes written out by mothers and grandmothers. They always had the neatest handwriting… and you can tell that recipe has been made many times, that’s when you know they will taste the best!

      That is a really good question and I’m going to update the recipe. These squares are best served COLD, so after cooling for about 20 minutes or so, store in the fridge for 4-6 hours (or longer) before serving. They will still be tasty warm, if you don’t have a lot of time to cool, but you will enjoy the leftovers after they’re cold much more.

    I love the photo of your grandma’s recipe card! Recipes like these are the ones worth keeping and it’s a great way to honor loved ones. I think these are much easier to make than traditional pumpkin pie, but people would probably like these a whole lot better! Can’t wait to try these. Thanks for sharing.
