Favorite Finds Lately & a new GREEN breakfast

Starting to get used to the time change yet? I’m definitely not! I have to say it has been nice walking Max with the sunrise, rather than it being pitch black. However, it getting dark at 5:30 is just not for me.

I’m having a terrific Tuesday, anyway, and I hope you are too!

Over the weekend I made a trip to both Costco and Trader Joe’s. Yes, it was a very busy Saturday!

I found some great things to share……

A regular purchase from Costco are these mulitgrain tortilla chips. They are awesome….so flavorful with the perfect crunch. Brad and I both gobble these up. I’m pretty sure that I’ve also seen these at other grocery stores. At Trader Joe’s, I changed things up a bit when I bought salsa for the week. Typically, I get the green salsa, but Michelle had recommended this on her post last week. I really loved the flavor, Brad not so much. He said it was just alright, but he likes a spicy, non sweet salsa. However, if you like a mild sweeter taste, definitely give this a try.

I was beyond excited to come across already diced up sweet potatoes. I actually have a couple of sweet potato recipes that require diced sweet potatoes that I’m planning to try, so this was perfect. Dicing sweet potatoes can be such a pain. I mentioned the Chunky Guac before, but it is so good I must recommend you stop what you are doing and go buy some now!! 😉 Those chips above are especially great dipped in it.

These are new at my Costco and I was thrilled to see them. This superfood is the little seeds that you get out of a pomegranate. You can sprinkle these over pancakes, waffles, salads or mix into yogurt or cottage cheese….the possibilities are endless. Check out the great nutritional stats here.

You can get these flatouts at pretty much any grocery store. They have really great nutritional stats and ingredients and only 100 calories. I use them in the morning to make breakfast burritos or for making sandwich wraps.

Tis the season!! I haven’t tried either of these products yet, but if I know Trader Joe’s, they’re going to be great.

And I even have a new favorite breakfast and dinner recipe……

The breakfast recipe is a spinoff from the Paleo Breakfast Scramble. Please say that you can tolerate the color of this scramble because it is so good and I don’t want you to miss out on it…..just because it’s green!

I had this all made up the night before and in the refrigerator. So, in the morning, all I had to do was fry it up…..super easy and super scrumptious.


Green Monster Breakfast Scramble
Serves 1 and is about 200 calories without toppings
Paleo & Gluten-free
  • ½ tsp coconut oil or cooking spray (calories calculated with coconut oil)
  • 3 egg whites (or similar desired amount)
  • ½ cup pumpkin puree
  • 1 small very ripe banana (if you don’t have a ripe banana, just mash up your banana and warm it in the microwave for about 40 seconds)
  • 1 handful of fresh spinach
  • 1 tsp vanilla
  • 1 tsp cinnamon or pumpkin pie spice
  • 1 packet stevia or other sweetener (optional and not Paleo)
  • Favorite toppings, like nutbutter, coconut butter, honey, and/or fruit (I used sunbutter and pomegranate seeds in the picture above.)
  1. Heat coconut oil in a medium skillet over medium-high heat.
  2. Mix all ingredients in a food processor until spinach is fully blended.
  3. Scramble batter on medium-high heat, flipping and stirring occasionally for about 10 mins.




My favorite new dinner recipe is one that I’ve been wanting to try for awhile now and finally did this weekend. By the way, this is a left over burger and the picture definitely does not do it justice. I forgot to take a picture Sunday night when we were eating dinner. This is a Healthy Chicken Parmesan Burger, recipe courtesy of Courtney. All of the burger lovers in my family loved these. If you like burgers and you like Italian food, these are a MUST make….so good!

    I guess I should have mentioned it’s not very spicy, but we like the roasted flavor . . . and then I eat it with a bowl of diced jalopenos. That’s actually my favorite way to eat salsa. Each bite get’s a bit of jalopeno. Weird–I know. But so good.

    If your husband likes spicy, try the Hot Smoky Chipotle Salsa that TJ’s sells (you can barely see a pic of it in my post about the Fire Roasted Salsa). I love it, but my husband think’s it’s too spicy. Too spicy?!? No such thing (in my eyes)!

    I have been shopping weekly at Trader Joe’s for about a month now and I definitely have my staples! They include: frozen green beans and corn, salad mix, roasted coconut chips, apple cinnamon sticks, veggie sticks, feta cheese, english muffins, yogurt and then I usually pick up a couple other things not on our list that we want to try :)

    I love that cranberry apple butter, it’s delicious mixed in to oatmeal and yogurt.
