Peach Almond Pancakes

I hope everyone is having a fun weekend and that your fun continues today! Alexis and I had a SUPER fun and successful day yesterday with back-to-school shopping. She is completely all set to go back.

To fuel our day we had pancakes for breakfast. These pancakes sure did the trick. They are packed with protein and are the perfect powermeal to keep you going for hours. They are very filling. I really only needed one with some fruit and I was good to go, but, of course I had to have another half. They are not as peachy as I would have liked, but they definitely have a lovely almond taste, which I LOVE.

I enjoyed them with the peach yogurt I had left over from making the pancakes, a little bit of pure maple syrup and fruit. I’m already looking forward to tomorrow morning when I can have another one for breakfast. 😉 I will definitely make these again and next time I may experiement with a different fruit.

Start off by mixing dry ingredients (flours, baking soda, cinnamon, salt) in one bowl and wet ingredients (eggs, milk, yogurt, honey) in another.


Next combine wet ingredients with dry ingredients. Dice 1/4 cup (about 1/2) of a peach and add it to the batter.

Spoon out several spoonfuls of batter onto a heated skillet and use the spoon to form the batter into a circle. Batter will be pretty thick and won’t look like the typical pancake batter…..this is normal. Cook for a few minutes on each side and until each side is golden brown.

Top with your favorites, such as fruit, yogurt, syrup, and would even be delicious with a slathering of nutbutter. Enjoy!


Peach Almond Pancakes

A filling protein packed pancake with a lovely almond flavor to help you power through your day!
  • 1 cup almond flour (I used Trader Joe's)
  • 1 cup oat flour (I processed a little less than 1.5 cups of rolled oats)
  • 1 tsp baking soda
  • 1 tbsp cinnamon
  • dash of salt
  • 2 eggs
  • 4 tbsp unsweetened vanilla almond milk (any milk will work)
  • ½ cup peach greek yogurt (I use Chobani)
  • 1.5 tbsp 100% raw honey
  • ¼ cup chopped peach
  • cooking spray
  • favorite toppings, such as, fruit, maple syrup or yogurt
  1. Mix together all dry ingredients in a large bowl.
  2. Mix together all wet ingredients in a medium bowl.
  3. Combine the wet ingredients into the dry and fold in the peaches.
  4. Heat a large skillet sprayed with cooking spray over medium high heat.
  5. Once the pan is heated, add a few spoonfuls of batter to the pan.
  6. Cook pancake for a few minutes on each side and until golden brown. You will not see the pancake bubble when it is finished cooking like the traditional pancake.
  7. Repeat until all batter has been used. Keep finished pancakes warm by putting them in the oven heated at about 200 degrees.
